Old Fashioned Coconut Cream Pie

This pie was excellent! Served it with my Easter meal, I did use 1 can of coconut milk & half & half to measure 3 cups, also used real whip cream. Everyone enjoyed.

This was so simple,and fast the hardest part was chopping parsley & garlic. Went together fast loved the flavors, served with garlic orzo and steamed broccoli. Boyfriend said that's a keeper you'll have to make that again. Would be an easy recipe if you were entertaining, or short notice guests.

Apple Crisp Cups

Made these for super bowl I put ameretto in with apples, made in regular size muffin pans they were great. Had some left over dough made the remaining with rasberry no sugar just a few fresh berries,now that's a 5 star recipe.

Sugar Cookie Icing

Love this recipe! I love almond anything but you could change the flavor to vanill, lemon, peppermint what ever extract you have on hand. I also doubled the milk amount as other stated toget the consistancy I wanted dried shiney & hard.

Tiramisu II

I doubled this recipe to fit into a 10" springform pan, therefore I quadrupled the coffee (I used espresso rum & kahlua) rum mixture. Made 24 hrs in advance. Took it to an Italian themed dinner. Most people had never had Tiramisu, but it was devoured.

Peanut Butter Noodles

Told my boyfriend we were having Chicken and noodles for dinner, boy was he surprised he isn't a big ginger fan but he loved this recipe, I also only used 1/2 of the chili paste, next time I will use both teaspoons. All the spices and peanut butter worked nicely together. Next time I will put my chicken in with the noodles also we had broccoli on the side think I will thought that in as well excellent sauce.

Rhubarb Strawberry Crunch

This would have been a 5 star had it just been a Rhubarb Crisp but when you add those strawberries you need to adjust the sugar. I like to follow recipe as written first time then adjust for my taste. I made 2 9x9 but did add more fruit to fill 2C rhubarb 2C strawberries per 9x9 made one for friends birthday next time will cut back sugar or use larger ratio of rhubarb, maybe no sugar in fruit mixture and keep topping the same.

Chicken Pot Pie II

Made this last night left out potatoes was excellent I used the vegtables I had on hand peas w/pearl onions and mixed veggies, I really liked the pearl onions in this think next time will use mixed veggies and pearl onions! Used my pie crust, haven't made a savory pie in sooo long this was excellent. Had Strawberry Rhubarb Crisp too.

Guinness® and Chocolate Cheesecake

Made this for St.Patrick Day I read reviews so I cooked it longer 60 min total, left in oven chilled I did make one change I added espresso powder to crust 1/2t because I find it gives the chocolate a richer flavor, took to dinner party everyone raved and wanted recipe. Will make again! Rich and delicious!

Too Much Chocolate Cake

This cake was yummy!!!! When I went to measure sour crean I was a 1/4 C shy so I added 1/4 C buttermilk. Did not wait 1 1/2 hrs to remove from pan, Tastes really good warm w/the chips all gooey melty. Next time I will use 1C semi-sweet & 1C white chips. Made this again 3/14/12 this time I replaced the water with coffee, again couldn't wait eat warm with chips gooey melty good.

Excellent, I kinda sliced my onions thick, but I really. Think the onions make this, I followed recipe exactly, except incovered for the last 20 minutes to put cheesey crust on top. Very good thanks for recipe

J.P.'s Big Daddy Biscuits

Excellent! Wasn't sure about the sugar, but was plesantly surprised, was out of milk, so I used buttermilk, & I also used butter instead of shortening, only made 4 biscuits. Was perfect for our Sunday morning biscuits & gravy. Boyfriend asked for recipe, because when he works out of town he cooks for the crew, figured they would enjoy these biscuits & gravy!

Sam's Famous Carrot Cake

Made this cake last night layered 2 9" cake pans baked for 40 min. Frosted w/Creamcheese Frosting II was just what I had hoped for. Mom use to make this & I remembered it had crushed pineapple and coconut! Loved it!

Miniature Cheesecakes

I omitted the nutmeg as well, and crushed a box of nilla wafers for crust. Made these for super bowl party made three batches, one I topped w/cherrys, one w/blueberries, the other I made w/oreo crust made a chocolate ganache w/one half cup heavy cream 1Tbs butter, bring to boil add 3/4 C chocolate chips pull off heat, wait 5 min. Stir till smooth pour over cooled cheesecake! Big hit @ Party yummy!!!!
