About this Cook
Wife and mother of two nutty boys! Working full time as an RN and I wish I had more time to experiment in the kitchen. I love this site for quick recipe ideas! Been using it for years!
My favorite things to cook
I'm more of a baker than a cook... Love to make cookies (I'm famous for them) and cakes. I also really like throwing a bunch of stuff in a pan with some olive oil, wine and seasoning and see how it turns out! Especially veggies!
My cooking tragedies
I can never get brownies to cook right. I also severely injured an expensive pan when I tried to steam broccoli without water (oops)!

Apple Pie Muffins
I made this recipe this afternoon. It is a keeper! The only thing I found, was that it made more than what is stated above. I ended up with 12 large muffins, and then added some chopped pecans and made another 12 mini muffins! Both were delicious. I will definitely use this recipe again!

Aimee's Quick Chicken
This is a great, easy recipe. I love the cheese/bacon/mustard combo! My two boys, ages 6 and 10, who can be very picky ate it up too! I marinated my chicken first, with lime, garlic, vinegar/oil overnight. I find if I don't marinate, the chicken is never as good. I also used partially cooked bacon strips, vs the bacon bits. I broiled on low for a few minutes before serving so the bacon was crispy, along with the cheese, and it was yummy! It can be very salty, so choose your teriyaki sauce wisely!

Baked Dijon Salmon
I have never cooked salmon before. My husband likes it, and always orders it when we go out, so I figured I'd try it. I probably cooked it wrong, but it was mushy. I didn't like it at all, and my husband didn't love it. Next time I think I'll try a cook top recipe, vs an oven recipe.
