Lighter Fettuccini Alfredo

I added frozen spinach and chopped carrots to the sauce, my kids were leary of the colors, but once they tasted it - ate it right up.

Sun-Dried Tomato, Feta and Pine Nut Salad

This was a great salad even though I used romaine. My sun-dried tomatos weren't getting soft enough so I put them in 2 cups water and microwaved them for a minute - that worked great. I put the pine nuts in the toaster oven and toasted 2 times on light - easier than broiler, didn't have to keep an eye on them. I'd definately make this again.

One Skillet Pork Supper

bland, chops were tough. would remove chops before adding veggies and put them on top and reduce to low.

I can't believe how easy and tasty this was. I only had time to marinate for an hour and it was so yummy that I gave my printed recipe to my guest. We'll definately have this again.

Gourmet Chicken Sandwich

I made this for a dinner party - couldn't find foccacia; substituted pumpernickel and rye. Created make your own - served w/lettuce, roasted red peppers, red onions and cheese - great hit. Made chicken ahead of time & heated up in oven for 20 minutes before serving. Very easy - would definately make again - but use sliced jack cheese.

Quick and Easy Green Chile Chicken Enchilada Casserole

Great recipe, I couldn't find green, so I used red enchilada sauce, which was spicier. I also added a can of black beans which added some great fiber.
