Excellent Oatmeal Cookies

I would have put one star but that states I couldn't eat it which wouldn't be true... Definitely didn't like! These were just too cakey- very dry... just not a "cookie" at all. Kids and hubby like flavor but consistency is terrible! Will not make this recipe again!

Sweetheart Cupcakes

Love this creative idea for a store bought mix and love that, yes, it can be done using your favorite cake from scratch recipe as well! Don't forget chocolate lovers- white chocolate and regular chocolate and reserving some batter before cocoa is added if you still want the chocolate flavor...

Italian Cream Cake I

Absolutely Delicious! I don't have 3 round cake pans so I made this in a Wilton Decorative pan (the large Heart)- I changed the baking time to 35 minutes at the same temp. It turned out great! I will say next time I may lower temp to 325 degrees and bake to 40 -45 minutes just because my edges did start to pull away from the pan before the center was completely done but no worries, the consistency and texture was the same all around. I also did cheat a bit... I used store bought cream cheese frosting and mixed in finely chopped pecans (I used pecans instead of walnuts in the mix because our family likes the flavor better)- After icing, I added a bit of chopped pecans as garnish w/ toasted coconut. Again, Delicious!- and we will definitely make this again!

Simple Beef Stroganoff

This is a great simple meal. I change it up a bit to make it even faster. I buy a large bag of frozen meatballs at our grocery store- They have Italian seasoned, home style, and turkey. Saute onion, mushrooms, green pepper, and season a bit then add the meatballs and continue to cook stovetop or cook meatballs on a pan in the oven and add them to the skillet when they are done. Then add your cream of mushroom soup, a can of milk, and a package of lipton soup mix. It is very fast, tasty and a salad goes great on the side! Great meal for moms who work or have kids with after school activities. I also like to have toasted bread with it. *TIP- Budget friendly too because I cut the meatballs into pieces which makes it stretch farther.
