Pumpkin Ginger Cupcakes
I made these cupcakes for our family dinner. I didn't frost them, just topped with a large scoop of whipped cream as they were served out individually. They were a huge hit and I will make them again. I will say, that now (two days later) they are very moist to the touch; almost too moist in my opinion. I may try to adjust the recipe for this in my next batch.

Extra Gingery Bread
Loved this recipe. I made cupcakes to take into work and everyone else quite enjoyed them as well. Reduced cooking time to 18-20 minutes for cupcakes. I didn’t use the oil at all, substituted ¼ cup butter and a splash more apple juice. I thought the cupcakes turned out well and moist enough for everyone.

Cream Cheese Frosting II
I love the flavour of this frosting, but had difficulty with the consistency. It came out rather runny for me. However, there could be some extra factors as to why this happened. First I used my hand blender, which I’ve never used for frosting in the past, I usually hand mix with a fork. Secondly I already had on hand some spreadable light cream cheese so I used that. As with other frostings I added more confectioner’s sugar, but it didn’t thicken up like I would have expected it to. I will try this recipe again, just to see if it turns out better and update my review.
