Red Garlic Mashed Potatoes
This is a great recipe. I did make a few changes: used milk instead of cream, cut the butter down a little bit, and omitted the sugar. I think it's key to avoid overcooking the cubed red potatoes, so they don't end up too watery/mushy. Also use a good steak seasoning that's not too overpowering. I use Emeril's all natural steak rub, and get better flavor results with that then my Penzey's chicago-style steak seasoning. I also don't bother using a blender at the end, since I like to keep the texture of the red potato skin intact. This is a really good place to start if you want to make restaurant style creamy garlic mashed potatoes.

Best Baked Chicken
This is a nice twist on classic breaded/baked chicken. My husband & 2 year old loved it. Maybe it's just my oven, but 40 minutes would be too long for this to bake uncovered, so I covered it for 30 minutes, then removed the cover for the last 10 minutes of baking. This left it crunchy/chewy but not burned.The flavor is really good and it's easy (but messy!) to make. it's a good comfort-food staple and will go into my weeknight rotation.

Brown Sugar Meatloaf
Wonderful. Even my husband who hates meatloaf, lived this. I made it as directed with one minor change - I added a little shredded cheese to the meat mixture. It is slightly sweet, but in a good way. I think the ginger is what gives this a flavor edge. The ginger flavor is subtle but really enhances the flavor of the meat and balances out the ketchup flavor. I made this with mashed potatoes; I had made mushroom gravy as well, but didn't really need it as the meatloaf is so juicy. This is simple to make, a definite keeper for the weeknight rotation.
