Aussie Chicken

Easy to make, but I think you have to really like mustard to love this dish. It was ok to me, pretty tangy due to the amount of mustard so my 8 yr old didn't like it. Probably won't make again, although maybe would try something modified w/o the mustard. Also didn't use mushrooms, which may bring down the tanginess factor, but the fam won't eat them.

Spaghetti Carbonara II

I changed the recipe a bit, but I wanted to share because it was such a time saver. I had leftover spaghetti noodles, about 3 cups cooked, so I used this recipe as a base for using them. I fried the bacon bits (no onions), warmed the noodles in the microwave, and then tossed them directly into the pan with the bacon. I didn't even drain the fat off as I didn't add any other oil. I tossed those together, added about a teaspoon of red pepper flakes, couple of dashes of garlic salt, and 2 eggs (scrambled together), tossed those together and then added 1/2 cup or so of shredded mozzarella (no parmesan) and tossed it all together. One pan, woo hoo! So it came out very tasty as a "leftover" dish and I will likely cook extra pasta any time I make spaghetti so that we can have this the next night.

Texas Ranch Chicken

OK, but not over the top. It tasted like chicken and hot ranch, so it was good but nothing special. I even added bacon to spice it up a little. Just ok.

Chicken Enchiladas II

My husband, who is very picky, told me to keep this one in rotation. Didn't use the green onions or chiles (like I said-picky) so I added other seasonings to perk up the chicken a bit. Served it with the sweet corn cake, also on this site. He loved that too. Will definitely make again.

Bacon Wrapped Chicken

Very good flavor, served with fettucini and bread sticks. I seasoned the chicken with garlic salt and pepper before pounding and then left the salt and pepper out of the sauce. A little too time consuming to make very often, but may make again once in a while.

Cube Steak Parmesan

Can I say Yum. I did change a few things, didn't have crackers, so breaded it flour/garlic salt combo, egg and then italian seasoned bread crumbs which works well with the recipe anyways. As per another reviewer, when baking the already fried steaks, I put them in a baking dish sprayed with pam, and poured store bought spaghetti sauce over the top, covered with foil and baked for 20 minutes. Placed thick slices of mozzarella on top of the sauce and baked for 10 minutes longer, served on top of spaghettini...very good and fairly easy.

Gramma Bertha's Banana Cake

Very good, and fairly quick. I added a little vanilla, cinnamon and nutmeg to the batter. Watch the cooking time, I checked 10 minutes early and it could have come out 15 minutes early I'm sure. Frosted it with cream cheese frosting.

Cuban Midnight Sandwich

Very good, and easy to prepare on a busy night. I cut the sauce ingredients (mayo, italian dressing) in half and thought that was plenty. Also just mixed in half the amount of mustard with the sauce and spread it on all at once.

Banana Fritters

Great snack, easy to make. I used far less than 2 qts. of oil. They came out like banana fritter donut holes. My husband couldn't stop eating them. If you don't have ripe bananas on hand, pop the top on an underripe banana and nuke it for 15-20 seconds or so, they mash right up.

Monkey Bread I

Delicious and super easy. Tons of leftovers, you may want to half the recipe, I made it in a bundt pan and it filled the whole thing. I wrapped the leftovers in foil and left it out over night, popped it in the oven the next morning and it tasted just as good.

Cream Filled Cupcakes

My seven year old daughter made this all by herself and won a blue ribbon at the Monterey County Fair for her age group. I must admit a 7 year old weilding a pastry bag was a little messy but these cupcakes were delish. They don't even need icing, we just piped a little dab of extra cream filling onto the top of each cupcake.

Granny's Smothered Chicken

Good flavor and fairly easy to prepare. I didn't have cloves, and it tasted fine. Very "homestyle" looking. Only thing, recipe does not provide a measurement for the potato water so be careful you don't add too much. I think I added too much, but I took some of the water out and mixed it with a packaged chicken gravy mix and put it back into the pan. Yummy.

I have been told by carrot cake lovers that this is the best carrot cake they have ever had...I have received many compliments and requests for this one, and would highly recommend it to someone looking for a great carrot cake recipe! It also won my aunt first place at our county fair!
