Pumpkin Bread IV

Reviewed: Feb. 28, 2008
This bread was nice and moist. If I make it again I will use less nutmeg, I found the amount to be a little overpowering. Thanks for the recipe.

Slow Cooker Chicken Stroganoff

Reviewed: Feb. 7, 2008
This was sooo good. I put a frozen slab of four breasts into the crock pot with 1/4 c of butter and sprinkled the dressing mix over all. Cooked on low 5 hours, added soup and cream cheese, cokked on high 30 minutes. Cut the chicken with a SPOON and mixed it up with the sauce, served it over rice. I just loved the flavor. The flavor reminded me of a recipe my grandma used to make called chicken ala king. Will definitely make again.

Country Fried Steak and Milk Gravy

Reviewed: Oct. 10, 2007
This was a great way to prepare cube steak. I have never double dipped in flour before, and it gave the meat a nice crispy coating. I don't know if I finally cooked it right, or if it was due to the meat sitting in the oven on warm for about 10 minutes while I cooked the gravy, but the meat was so tender you could cut it with a fork. My grandma always tells me "cook 'em quick in a hot pan!" So I let the pan get really hot before I added the oil. The gravy was good, but a little lacking in flavor. Maybe adding beef bullion would make it taste a little better. I will make this again.

Easy Slow Cooker French Dip

This was sooo good. I will be making it often. The whole family loved it. I did use two packages of au jus and two cups of water for lots of sauce. Thanks for the great recipe!

Cinnamon Bread I

Reviewed: Oct. 8, 2007
Good bread, and easy enough. I really like cinnamon so I was surprised when I wasn't ecstatic about a bread where it is the star. Followed the recipe, and then after trying a slice, I added a powdered sugar glaze which I think helped. I don't know if I would make it again though. The house did smell heavenly while baking. **NOTE** I took this out after 45 minutes and let it cool completely in the pan. Maybe baking too long is what's causing other reviewers to experience dry bread.

Chili Dog Casserole II

Reviewed: Sep. 26, 2007
I was skeptical, but these were actually pretty good...I did add a slice of american cheese inside with the hot dog, but other than that followed the recipe. I will probably make this again.

Fried Mozzarella Cheese Sticks

Reviewed: Sep. 19, 2007
Very good! I let the breaded sticks set for about ten minutes before I applied another layer of egg and bread crumbs. I had no problems with leaking cheese. We loved them.

Penne with Chicken and Pesto

Reviewed: Sep. 19, 2007
This was a really good recipe, which I followed exactly, except I added about 1/2 c. cheese instead of the 3 TB called for. I will definitely make this again.

Baked French Toast

Reviewed: Sep. 14, 2007
I followed other reviewers advice and used no milk, 2 cups half and half, and 6 eggs. I used a couple days old french bread, cubed it and followed the rest of the recipe but adding the sauce half way through cooking time. I used a 9x13 pan and want to warn you to either use a bigger pan or a drip pan because the sauce seriously bubbled over and my whole house was filled with smoke! It tasted really good though, kind of like a caramel-ish bread pudding.

Mock Lemon Chiffon Cake

Reviewed: Mar. 9, 2007
The taste is what saved this cake for me. 1st, make sure you read ALL the steps (i didn't read ahead, just followed the steps in order), my first mistake was mixing both boxes of pudding in with the cake mix (I used lemon cake, mayo). When I got to the 2nd step for the filling, I was like what pudding? Anyways I went to the store and got another box of lemon pudding for the whipped topping filling. So the cake wound up having an extra box of pudding in it. The filling was so runny that it would not set up and the cakes were sliding around. It wound up looking like an avalanche. But it was delicious. If I were to make it again I would fill it differently, maybe use real whipped cream instead of whipped topping or a whipped cream/cream cheese combo with the lemon pudding. But the lemon/strawberry combo is very good and the actual cake itself was dense and moist and really good.

To Die For Fettuccine Alfredo

Reviewed: Mar. 4, 2007
I made this again last night and just realized I've been doing it wrong, but in a good way. I only use 1 stick of butter, which is 1/2 cup vs. the one whole cup called for. And I just add the whole pint of cream. I also added some leftover Easter ham and a pinch of red pepper flakes. I just love this recipe it's so rich and versatile. Last time I added chicken and broccoli. Next time I think I will try it with crumbled bacon.

Eclair Cake

Reviewed: Feb. 7, 2007
Easy, good tasting dessert...but next time I make it I don't think I'll use the whole tub of frosting because it was a little to chocolate-y and it kind of overwhelmed the dessert. Maybe half a tub or just enough to get a thin layer on top. But I will make it again!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Feb. 6, 2007
Very good recipe that allows the room to experiment with your favorite fruits in addition to the fruits called for. I added banana and after chopping the banana and apples added the juice from one lemon before preparing the rest of the fruit. The leftovers were awesome blended with ice for a smoothie. My 1-year old loved the chips and I will likely make them without the salsa often.

Cream Cheese Frosting II

Reviewed: Dec. 19, 2006
Very good frosting that still has the tang of cream cheese to balance out the sweetness of whatever you're frosting. I found the amount to be perfect to frost a two layer 9" round cake.

Potato and Bean Enchiladas

Reviewed: Dec. 5, 2006
Good flavor, but would not make again as per recipe. If I make it again, I would definitely add sauce to the potato/bean mixture because the insides were dry. And I would also change the cheese to a cheddar/jack combo or mexican four cheese blend, or something. The queso fresco didn't have a good melting quality to it. But I liked the flavors, thanks for the recipe.

Downeast Maine Pumpkin Bread

Reviewed: Nov. 30, 2006
I don't really like changing the recipe and then rating it, but I think this recipe allows room for changes. I had a 29 oz. can of pumpkin pie filling so I used that and doubled the recipe without doubling the amount of sugar (1 cup white/2 cups brown) and using 1 cup oil, 1 cup cinnamon applesauce. Also didn't have cloves or ginger. Very good, moist, flavorful bread. Made three regular loaves and three small loaves in those aluminum tins. Thanks for the recipe! **I made this again and acutally followed the recipe - I liked it better the first time around with my alterations**

Corn Chowder - Fast and Great

Reviewed: Nov. 6, 2006
I guess I should have read the reviews first and I would have added less stock and another can of creamed corn. For me, this was too thin to be called a chowder. I got a tip from a co-worker though, that will be good on the leftovers...add instant mashed potatoes until the desired consistency is achieved. I think that will help. Overall good flavor though. Will probably make again with the noted changes.

Macaroni Salad for a Crowd

Reviewed: Sep. 18, 2006
I am the poster of this recipe, and I just made this yesterday and tried to pay more attention to the measurements. I would say I used about one cup of mayonnaise, not the 1/2 called for in the recipe. I also did not drain any of the juice from the relish, just added the whole jar in. And I only used 10 eggs (8 in the salad and 2 on top) and 1/2 of a medium purple onion. If you use a food processor on the onion and olives it really saves a lot of time, and also helps cut down on the harshness of raw onion. I also use the big holes on a cheese grater on the boiled eggs. I really have never measured the stuff that goes into this before, so please feel free to eyeball it and adjust it to your own tastes!

Easy Pancakes

Reviewed: Sep. 11, 2006
Personally I don't find the amounts in this recipe to be off, although it does sound like a lot of baking powder, I followed the recipe and the pancakes came out really good. I doubled the recipe and added about a teaspoon each of vanilla and cinnamon and then walnuts to each pancake while cooking. Really no other alterations needed.
