Beef Stew VI

This was SO good!! I don't cook very much at all and I managed to impress my husband with this. I made a couple of changes: I coated the beef chunks in a mixture of flour, salt, pepper and garlic seasoning before browning. Also, I used beef stock instead of bouillon and water. Because I was short on time I cooked the veggies for about 6 minutes before adding them to the pot and only cooked for 45 minutes instead of an hour. Last, I used sweet potatoes (it was all I had), and 4 tsp of cornstarch to make it nice and thick! It was really delicious and hearty.

Baked Garlic Parmesan Chicken

Great! The only changes I made were to skip the garlic and instead add some garlic / black pepper seasoning to the bread crumb mixture. I made sure to use Panko breacrumbs, and then after cooking for 35 mins (thick breasts) I put them under the broiler for 2 minutes to nicely brown the crust.

Muenster Chicken and Mushrooms

This was GREAT! I used a good swiss cheese, and dipped the chicken in egg instead of milk. I also used 98% fat free cream of chicken mixed with water for the sauce. I baked for about 40 mins, and it was moist and delicious!

Chicken Gruyere with Sauteed Mushrooms

This was great! I used a good swiss cheese instead of gruyere, and also used fat free cream of chicken soup mixed with water for the sauce. I also used egg instead of milk, and dredged through italian bread crumbs. My husband loved it! This will be one of my regulars.

Zesty Slow Cooker Chicken Barbecue

Great recipe - thanks! I cooked frozen breasts in broth for 2 hours on high and then added BBQ mixture and cooked on high for another 1.5 hours. Then I shredded the chicken and cooked for 30 minutes more. Turned out perfectly, and my husband loved it! We added some hot sauce for an extra kick.

Chicken, Sausage and Zucchini Pasta

I loved it! I used low fat spicy turkey sausage and it tasted great. I needed to add more tomato sauce than the recipe called for so you may want to have more on hand.
