This was SO good!! I don't cook very much at all and I managed to impress my husband with this. I made a couple of changes: I coated the beef chunks in a mixture of flour, salt, pepper and garlic seasoning before browning. Also, I used beef stock instead of bouillon and water. Because I was short on time I cooked the veggies for about 6 minutes before adding them to the pot and only cooked for 45 minutes instead of an hour. Last, I used sweet potatoes (it was all I had), and 4 tsp of cornstarch to make it nice and thick! It was really delicious and hearty.
