Soft Oatmeal Cookies

Fabulous! I added 1 cup of Kraft caramel baking nuggets, used a Pampered Chef mini cookie scoop, and let the cookies sit on the baking sheet for 2 minutes (after 9 minutes in the oven) before transferring to a cooling rack. One batch made more than 80 cookies. I'm off to the gym!

Cranberry Sauce

Simple and delicious. I used 1/2 cup brown sugar and 1/2 cup white sugar, and I boiled the berries for almost 15 minutes.

French Bread

This bread is yummy and easy, which adds up to fantastic! With just a few changes, this recipe made two large loaves in less than two hours: I added 1/2t extra salt and almost 2T butter for a little extra flavor, and since my KitchenAid was busy with cupcakes, I just kneaded the dough by hand for about 8 minutes. I made my family and friends very happy!

Grandma's Gingersnaps

I think I should change the name of the ones I made to Honey Spice Cookies: my kids came up with the idea to bake gingersnaps, and I said "yes" before checking the pantry. I was out of molasses and ginger! We used honey, cinnamon, nutmeg, cloves and cardamom (and sanding sugar on top) instead...FANTASTIC!!

Classic Tapioca Pudding

I tried making this in the microwave. The end result was quite delish--the mess I made getting to said end result was impressive!! My advice: stir every 1:30 once it starts to thicken.

Pumpkin-Oat Scones

I totally butchered this recipe...and it still came out great!! It was 5:00 in the morning, I was feeding a baby and trying to make coffee, and I unthinkingly just dumped all the ingredients together into a bowl and forgot the butter; so, I used oil instead and added chopped pecans. On the top, I sprinkled sanding sugar instead of using a glaze after it baked. Delicious!!
