I am a very busy mother of 2 teenage daughters....who happen to be picky eaters! My husband will eat just about anything! I work full time as a nurse, and am also a full time student to continue my nursing career, so I have very little time to cook decent meals! I love this site for quick and easy meals and different versions of what I already know.
My favorite things to cook
Desserts! I will cook any kind of dessert at least one time! Some people are afraid to bake, but not me! I am more intimidated with cooking meals than desserts! I love crock pot meals because of my lack of time at home, and italian dishes are what I am drawn to.
My favorite family cooking traditions
I do all the cooking, however my daughter is starting to experiment with baking some. My husband only knows where to find the dishes and silverware to eat what is made! When we were dating and I was out of state he called me once to ask me how to make a grilled cheese sandwich! Its still a joke around here! I grew up with my dad making a lot of the meals, but we were never "taught" how to cook! I'd love to take a cullinary class some day....when I am done with all these nursing classes!

Award Winning Soft Chocolate Chip Cookies
AMAZING!!!!! I made them EXACTLY as described and they are the most wonderful homemade chocolate chip cookies I have ever made. These will not last around here I am sure! THANK YOU!

Slow Cooker Macaroni and Cheese I
I may possibley make this again if I make some significant changes. I love the idea of crock pot mac-n-cheese but this version was terrible in my opinion. It was lumpy and very "eggy" which I should have known with having to add 2 eggs. It was also very oily because of the shredded cheese. I should have read the other reviews before making this but I just made it as is. It was edible and my family did eat it, but did not rave about it at all. Next time I will omit the eggs, use a different type of cheese, add some additional spices, and not put the cheese on the top until later. Good luck anyone trying to make this. I will come back again to look for different ideas with this recipe.

Kelsey's Favorite Stuffed Green Peppers
This is a great starter recipe. I happen to do my stuffed pepper slightly differntly. I do not brown my meat and I use instant rice. When I mix the raw ground beef I add 1 egg, some italian seasoning, a can of tomato paste, the uncooked instant rice and about 1/2 cup of water (to help with cooking the instant rice), I do blanche my peppers if I am making them in the oven, but if I stick them in the crock pot then I do not blanche them first. I stuff without packing firmly and then put any additional beef mixture around the peppers. Cover is 1/2 jar of your favorite chunky spaghetti sauce, cover with aluminum foil and bake about 1 1/2 hours @ 350. This is very moist since you are not browning the beef first. This is always a hit and cooks very well in the crock pot on low for 4-6 hours depending on the strength of your crock pot. Hope this helps anyone looking for a recipe without browing the ground beef first. Cheers!
