About this Cook
I am 32 years old. Married. The mother of 2 wonderful boys. Everyone in our family has a hectic time schedule. We try our best to make every moment count and worthwhile. My husband and I both LOVE to cook. We share the responsibility because we enjoy it. The only thing we fight about when it comes to food is..Whose doing the clean-up? (LOL) We also allow our children to help whenever possible. It gives us the opportunity to pass down traditional family recipes. As well as, preparing them to be successful adult cooks.
My favorite things to cook
Anything and Everything! I will try anything at least once! I love cooking for large groups and even intimate get togethers. As far as my favorite food, I would have to say that is my oldest son's Caramel Apple Cheesecake. It's simply heaven in your mouth. (Oh, how I have just made my mouth water. LOL) Everything is best with the gift of family, friends, laughter and food of thought.
My favorite family cooking traditions
I love holiday times. It gives me the excuse to cook my heart out with no guilt. Many of my greatest memories, laughter and experiences come from holiday times. All of us getting together and cooking, sharing and loving the time we had. We have many good cooks in our family. Well, with the exception of my older sister. She is a disaster when it comes to cooking. The woman could burn boiling water.(LOL) We love to laugh at all the things she has done. However, we cringe with her words of, "What can I do to help you cook?" With all the stories behind her, we sit and recall each one and laugh. "Do you remember when she...?" One year she sent her kitchen up to the heavens in a blaze of glory. I kid you not! Thank goodness no one was hurt. And the kitchen remodeling she wanted... HAD to be done.
My cooking triumphs
The year it was "My Turn" to make the traditional and MOST important part of Thanksgiving dinner. THE TURKEY!!!! (AAAHHH) I was so worried, scared and excited all in one. Never have I had such an important task. At the time, I was far from an experienced cook. I prepared well in advance, asking all the usual and typical ?'s. Then the big day came and I arose at the crack of dawn. I began to rub, stuff and spice that bird like no one before me. Then popped my creation into the oven for the long wait. Through the house things went on and I lost track of time. I was so proud of myself that it had not burned. (Grin) My husband took the turkey from the roaster and... BLAMM!!! Every piece of meat fell off every bone in that big bird. Knowing my face was turning every shade of red, I stuttered, "I planned it that way." The taste was amazing and we had no leftovers.
My cooking tragedies
I was getting really tired of the same old things for supper. So, I used a recipe from a calendar cookbook my aunt had purchased for me. The recipe was called, 'Slumgullion'. The name alone should have warned me. But, the ingredients sounded really good and it seemed easy to fix. My husband took one bite and his facial expression of disgust was just unimaginable. This was the only thing I have ever made not edible by human or otherwise. Needless to say, we ate out that night. That recipe and the recipe card took a trip into the trash can before we walked out the door.(LOL) Cook and Learn - Cook and Learn. If you make something that even the dog won't eat and live through it, vow to never make it again!! Or if you make something and it's a hit, you did a GREAT JOB! Maybe you deserve a pat on the back. Better yet, have the kids DO THE DISHES!

Spice Mix for Chicken
I really have no idea why everyone is comparing this recipe to KFC. KFC wasn't even around when fried chicken was invented. This is a Spice Mix FOR chicken, the recipe author DIDN'T state it was KFC's spice mix for chicken. Most reviewers are taste comparing this with a fast food chain's flavors, instead of basing their reviews on the flavor itself to chicken. The taste was pretty good. It bumped up a regular fried chicken recipe. I made it exactly as directed for my first batch. With my second batch, I added a little bit of poultry seasoning, sage, onion powder, marjoram, corriander and cumin. I'm giving 4 stars to the recipe because of the process of double cooking. I would prefer to do it once and be done, not add extra steps.

Best Ever Onion Rings
As the recipe author, I would like to correct the recipe. As a few reviewers have noted, the baking powder amount is high. This is indeed an error. Not sure if that was my original doing or from Allrecipes posting. The amount of baking powder should be 2 teaspoons, not 2 tablespoons. Also, if you would like to omit the baking powder all together, use self rising flour. Using self rising flour would omit the use of all-purpose flour and baking powder all together. This substitution makes for a super fluffy onion ring batter. I've used both variations and never had anyone not like them. An additional note: After removing the onion rings from the hot oil, one can quickly shake some additional onion salt if you prefer. Also, these can be dipped into original batter and then quickly dipped into bread crumbs for crunchier onion rings. It's all about preferences.

Whipped Cream
This recipe was very nice. Much better than store bought products. However, it was not sweet enough for the particular recipe I was using it for though. Next time I will use the suggestions of other reviewers and increase the sugar amount.
