Black Walnut Pound Cake

I made this in two bread pans after reading the review that this cake overflowed a 10 inch tube pan. It was perfect. I frosted it with the Scrumptious Penuche Frosting on this website and topped with more chopped black walnuts. Dad says it's the best black walnut cake, ever!

African Peanut Soup

I had never eaten peanut soup, but was tired of the usual vegan fare I had been making since our conversion. As other reviewers pointed out, this was pretty good the first day, but much better after it was in the refrigerator overnight. My father, a picky eater by his own admission, was convinced to try a spoonful. He suprisingly exclaimed, "Why that's pretty good!"

Green Smoothie

This is flat-out the best way to eat fresh kale! I also like this with spinach and kale combined. I agree with other reviewers who said that you need to double the milk and/or juice to make it drinkable (and blendable).

Cowboy Caviar

I've been making this for several years now and decided it was time to review it. I first learned about it from another source, but now use this recipe exclusively since I have gotten rid of all my cookbooks and only use Allrecipes. I have had requests for the recipe from every place I have brought it. I follow the recipe exactly, using a fat free Italian dressing when I have it. I also have found that if I don't remove the seeds from the jalapeno peppers, it's too hot for my family's taste.

Coconut Poke Cake

This cake was wonderful...moist and not too sweet. I used a 9 X 13 pan because I was afraid a layer cake would fall apart with all the liquid I was putting into it. I don't think that would have happened, though, as the pieces held together well when served. I plan to try a layer cake next time. Also, I used "lite coconut milk" which I found at my local supermarket.

Sauteed Garlic Asparagus

I have never eaten asparagus that I liked, until now! It was always overcooked and that nasty brown/green color. I coooked this exactly per the recipe and made sure not to overcook it. My whole family loved it. My husband is now talking about planting asparagus!

Old Settlers' Baked Beans

I used this recipe as a base to make vegetarian baked beans. I left out the meat and cooked 1.5 pounds of dried navy beans in a pressure cooker. I doubled the other ingredients and used my large crockpot on low. I was worried that they wouldn't cook down and be too runny, but they turned out delicious!

Almond Strawberry Salad

Country-Style Steak

I made this for my father--Mr Meat and Potatoes. He loved it. I changed it a little to make preparation a breeze. I cooked it in the crock pot on low for 8 hours. I added a thinly sliced onion but I didn't pan fry at all and left out all the olive oil and flour during cooking. I thickened the 'gravy' at the end using some flour. Served over brown rice. Delicious!

Apple Mango Salsa

I removed all the seeds from the jalapeno and the salsa is very light and mild. The fresh lime juice brings all the flavors out. Tastes just like one served at a local restaurant with grilled talipia. Good on crackers, but I love it just eaten with a fork. Doesn't last long at our house.

Quinoa Chickpea Salad

I made this adding extra chopped veggies: broccoli, carrots, zucchini, green pepper, celery and a can of black beans. Great flavor with the cumin. We eat this hot or cold. Good side dish or could be a complete meatless meal with crusty bread on the side. This one's a keeper.

Tiered Cheese Slices

A great make-ahead dish for holiday entertaining. I got lots of compliments on this and several requests for the recipe after a recent open house. I think next time I will chop the nuts and cranberries smaller as I had difficulty spreading the cheese. Great flavor and keeps well!

Spinach Cheese Ball

I would give this 6 stars if I could! I made the Christmas tree shape. The only problem was it looked so good I could hardly get my guests to eat it! I didn't have a yellow pepper and stuck a strawberry on top of the tree. I used pomegranate seeds around like a cranberry garland. Easy to shape using plastic wrap. I made ahead and froze it without the parsley or pomegranate seeds. I took it out of the freezer to thaw slightly and added those. This one's a keeper. It will be a regular at my Christmas open house!

Cream Cheese Frosting

This frosting had a great taste, but I don't know how others found it easy to use to decorate. I had to keep putting it back in the refrigerator to get more firm. The heat from my hands would turn the frosting too soft in the bag.

Fiesta Rice

This one's a keeper! I made this tonight and my father, a discriminating (meaning picky) eater, declared it "wonderful"! I used regular cooking brown rice, added a package of dry onion soup mix and cooked. Added the beans, canned corn (that's what I had) and salsa after cooking. I'd give this six stars if I could!

Strawberry Broco-Flower Salad

Very good as written. However, I didn't have raspberry vinaigrette dressing, so made one from this site. The salad is good immediately, and better as leftovers later. Note: add the strawberries just before serving.
