Blueberry Streusel Cobbler

Reviewed: Oct. 23, 2014
We have blueberry bushes and tons of fresh blueberries come on around the 4th of July. I have tried this with both fresh and frozen, but find we like it best with frozen berries. I increased the berries by half, since we like the taste of the fruit.

Cheesy Baked Eggs

Reviewed: Oct. 23, 2014
All the family enjoyed this recipe, although they won't have anything to do with quiche. I loved it because it was easy and I could prepare it ahead.

Spinach Basil Pesto

Used my blender and took the advice of other reviewers using almonds, since I had no pine nuts. Excellent and easy....my kind of recipe!

Pizza Crust I

Reviewed: Oct. 23, 2014
Good Crust. I subbed ½ c. semolina for some of the all purpose flour, which made the dough easy to handle and gives that great italian taste!

Giant Crisp Chocolate Chip Cookies

Reviewed: May 3, 2014
Best Chocolate Chip Cookies I ever made! I think I have tried hundreds of recipes looking for that perfect cookie. Well this is it! The holy grail of chocolate chip cookies! I love mine crispy and this is just perfect. I took others advice and added no salt, since I didn't have unsalted butter. Also, used 1 cup white sugar and ¼ c light brown sugar. I had dark chocolate chips, so I used those. That made the cookies not too sweet; perfect! I baked about ¼ the recipe immediately and froze the rest in individual balls on a parchment covered cookie sheet. When frozen I put them in a ziploc freezer bag to cook later. Works great.

Barley Bake

Reviewed: Mar. 18, 2014
I use allrecipes exclusively, but rarely review recipes unless I have something to add to the discussion. This was wonderful, I'd give it more stars if I could. I've added barley to my diet as it's supposed to help lower cholesterol. This will be a regular at our house! Also, I found a very easy way to prepare it: a small crockpot. I used what I had on hand; which was hulled barley (it's more nutritional), sliced almonds (no pine nuts) and left out the mushrooms (didn't have any). I followed other suggestions and used about 3 Tbs olive oil for browning. Than into the crockpot and in about 3 hours it was done.

Followed the reviewer tips to stir constantly. Took it off the stove at 295 degrees. Turned out perfectly!

Mango Peach Banana Smoothie

Reviewed: Jul. 27, 2013
I'd give this more stars if I could! Great combination of flavors. I used what I had, so there are a few substitutions, but this had a wonderful, light, summery flavor. I used 1/2 fresh mango with the frozen bananas and peaches. I only had plan yogurt, but added some vanilla almond milk so the mango wouldn't make it too thick. Will definitely make this again.

Southern Green Beans

Reviewed: Jun. 15, 2013
Delicious vegetarian option with small changes. I omitted the bacon and substituted vegetable broth for chicken broth. Love the kick of the balsamaic vinegar. Used finger potatoes and green bean from the farmer's market. I used olive oil to saute and did throw the green beans in with the onion for the last 5 minutes. Everyone loved it!

Couscous Primavera

Reviewed: Mar. 13, 2013
Loved this dish! We'd give it 10 stars if we could! I only had 1 1/2 cups of couscous, so I cooked a box of Near East brand Quinoa and Brown rice and added that with the hot broth. Also, I didn't cook any of the vegetables, just added them with the boiling broth and let it all sit. Sooooo good. The mint really added a nice touch.

Blueberry Boy Bait

Reviewed: Mar. 9, 2013
Made this for a church meeting and got rave reviews! I took suggestions from the reviews and added almond flavoring and doubled the blueberries. The blueberries were frozen from my garden last summer and I stirred about 1/4 c. flour to 2 c frozen blueberries. Turned out perfect. They didn't sink and they cooked up just fine. (I always add my blueberries frozen and haven't had any problems). I did add about 10 minutes to the cooking time. My 'go to' recipe for blueberries used to be Blueberry Buckle, but I now have a new one!

These have been my favorite cookies since my mom made them when I was a kid. Always a chocolate chip lover and especially fond of crispy cookies....simply the best! Special favorite of my daughter and granddaughter too.

Strawberry Broco-Flower Salad

Reviewed: Mar. 23, 2012
Very good as written. However, I didn't have raspberry vinaigrette dressing, so made one from this site. The salad is good immediately, and better as leftovers later. Note: add the strawberries just before serving.

Fiesta Rice

Reviewed: Mar. 13, 2012
This one's a keeper! I made this tonight and my father, a discriminating (meaning picky) eater, declared it "wonderful"! I used regular cooking brown rice, added a package of dry onion soup mix and cooked. Added the beans, canned corn (that's what I had) and salsa after cooking. I'd give this six stars if I could!

Cream Cheese Frosting

Reviewed: Jan. 20, 2012
This frosting had a great taste, but I don't know how others found it easy to use to decorate. I had to keep putting it back in the refrigerator to get more firm. The heat from my hands would turn the frosting too soft in the bag.

Added pitted tart cherries for some extra zing. Doubled the topping as suggested by others, but found it too much. Next time will make it 1.5 times as much.

Spinach Cheese Ball

Reviewed: Dec. 26, 2011
I would give this 6 stars if I could! I made the Christmas tree shape. The only problem was it looked so good I could hardly get my guests to eat it! I didn't have a yellow pepper and stuck a strawberry on top of the tree. I used pomegranate seeds around like a cranberry garland. Easy to shape using plastic wrap. I made ahead and froze it without the parsley or pomegranate seeds. I took it out of the freezer to thaw slightly and added those. This one's a keeper. It will be a regular at my Christmas open house!

Tiered Cheese Slices

Reviewed: Dec. 26, 2011
A great make-ahead dish for holiday entertaining. I got lots of compliments on this and several requests for the recipe after a recent open house. I think next time I will chop the nuts and cranberries smaller as I had difficulty spreading the cheese. Great flavor and keeps well!

Quinoa Chickpea Salad

Reviewed: Nov. 12, 2011
I made this adding extra chopped veggies: broccoli, carrots, zucchini, green pepper, celery and a can of black beans. Great flavor with the cumin. We eat this hot or cold. Good side dish or could be a complete meatless meal with crusty bread on the side. This one's a keeper.

Apple Mango Salsa

Reviewed: Nov. 3, 2011
I removed all the seeds from the jalapeno and the salsa is very light and mild. The fresh lime juice brings all the flavors out. Tastes just like one served at a local restaurant with grilled talipia. Good on crackers, but I love it just eaten with a fork. Doesn't last long at our house.
