Pasta Primavera with Smoked Gouda

This recipe was AWESOME! You can basically throw any veggies you want into this, but I loved the zucchini and wouldn't do without that! My boyfriend absolutely loved the smoked gouda topping. We couldn't get enough of this!!!

Jen's Heavenly Egg Salad

I had never had egg salad before because I thought it looked icky when I was a child. Now that I've grown up (somewhat lol) I decided I would try it because my tastes have changed and I love eggs and mustard now. This was SO YUMMY! I have also been craving pickles lately so I decided to dice up some kosher dill pickles and add those to the mixture. It added just the right amount of saltiness and tanginess that I didn't even need to add any extra salt. I also didn't have any fresh lemons on hand so I just added a few squirts of lemon juice from a bottle. Highly recommend this recipe, I will never try a different one!

Amazing Greek Pasta

This sauce was awesome! I didn't have italian diced tomatoes on hand so I used regular diced and added a little bit of italian spices. I omitted the olives because I'm not a fan but it still turned out great!

Easy Tomato Crab Soup

This soup was awesome! I made it exactly how it was shown with the exception of using fat-free half-and-half and it was perfect! Next time I make it I may add more seafood to it like mussels, scallops, and shrimp. So yummy!

Spinach Mushroom and Ricotta Fettuccine

This recipe alone is pretty bland, so I decided to add some stuff to it. I added mozzarella and parmesan cheese, minced garlic, and some italian seasoning. The end result was ok, but not fantastic. I think what turned me off the most was the spinach fettucine pasta so next time I make this (if I ever do) I will use regular pasta.

My Favorite Mexican Rice

Yummy!! I decided to whip this up with stuff I had around the kitchen. I didn't have any tomato sauce or green chiles, so I substituted 3/4 cups of my favorite salsa in place of those two ingredients. Turned out wonderful! I agree with one of the other reviewers about it being very salty, so I recommend cutting the salt in half, too.

Low-Fat Fettuccine Alfredo with Chicken

LOVED THIS! For someone on a diet who loves fettuccine alfredo, this recipe is a godsend!! The only thing that I have to say is that the sauce got super thick when I heated it up, I think it's because I used flour instead of cornstarch. Either way, this was so delicious and it really didn't taste low-cal!

Chicken and Artichoke Pizza with Fresh Tomatoes

This pizza was awesome!! My boyfriend and I made it twice in one weekend because we loved it so much the first time we were just craving it again! I made one change and added a thin layer of pesto to act as the sauce and it turned out great.
