Guilt-Free Apple Cobbler

YUMMY!!! Due to reviews, I did add two packets of Splenda to apples & used 3 instead if 2 Tbl brown sugar (also Splenda). Browned under LOW broil for a minute or two. Served with ff/sf vanilla bean ice cream. Heavenly!!! I will be spreading this recipe around the family!!

House Fried Rice

Shredded onions, carrots, cabbage, celery stir fried in small amount of hot sesame and olive oil. Then added some cubed pork and raw shrimp until cooked. Added cold cooked rice and a little more sesame oil, the soy sauce and some beaten egg. Pretty good.

Zucchini Pie

Left out the oil completely. Added more veggies and doubled the batter to compensate. Cooked in a 9x13 for about 40+ minutes. VERY good! Leftovers will be cut into pieces and eaten in the car on the way to work!

Baked Ham

EASY, moist. Ham is delicious by itself, but I wanted an easy recipe to heat it and not dry it out.... and this was it! Next time, I may put some brown sugar on top of the ham after I pour the Coke on it.

Mimi's Zucchini Pie

I LIGHTENED this up by using Egg Beaters, reduced fat Biscuik, and only about 1 Tbl of oil. Added more zucchini (cuz I love it and I can't help myself......this is why I don't bake!!); mixed the parm and some fresh basil right into base; chopped instead of whole tomatoe slices so I could have tomato in every bite. Could not find my pie dishes (really??!?!!! cuz I KNOW I have two of them !!!.......guess it's been a while since I baked a pie !!) Used an 11x7 and had to bake an extra 20 min for over 50 min total. Would also be great with spinach and/or artichokes added !

Summer Corn Salad with Asparagus

Threw corn, asparagus and fresh red peppers all on grill at once ! left out garlic; does not need it. Added a few sweet grape tomatoes. EXCELLENT; light, FRESH. will make again and share recipe !

French Spring Soup

YUMMM! I too subbed low fat chicken broth for water, skipped the rice and added zucchini since I had some. I also subbed fat free half and half for the cream to reduce the fat content. VERY VERY GOOD ! Will definitely make again. thank you

Cream Cheese Squares

YUMMY ! you do NOT need to dump all that butter/margarine on top, though. would be perfectly good just brushed on. I will make this again for parties. I some blueberry pie filling under the top crust. I have also made something very similar with finely chopped apples. LOVE IT !

Lentil Soup III

for those that say lentil soup is BLAND: I think you have to grow up eating this soup as a child. CARROTS & CELERY (make sure to include the LEAVES) are a HUGE help along with bay leaves. I add sausage or keilbasa or ham for my meat loving husband.

i make this for all parties at my house. Everyone LOVES it ! I use rainbow OR orange sherbert. Also, have a chilled bottle of CHAMPAGNE for those who want to "spike" their punch !! YUMMY !!

Quick and Easy Alfredo Sauce

very good, creamy and EASY ! i used LOW FAT ingredients like lite cream cheese and fat free half and half instead of milk. Reheats very well, too...does not "break". Added what I had on hand to this : grilled chicken, mushrooms and baby peas. I will definitely make this again.

Chicken Diablo

VERY EASY and MOIST. I used part Franks hot sauce and part the original Cholula hot sauce (totally different flavors) then was worried it would be too hot, so I added a smidge more honey. Not hot at all, but tasty. I will definitely make this again and adjust the honey and hot sauce to my mood for the day !

Creamy Ranch Pork Chops and Rice

QUICK & EASY. threw it all in the oven to save the fat from browning the chops. pretty basic flavor, but very satisfying. i will make again, especially when feeling lazy or pressed for time.

Crescent Wrapped Brie

Made these for a BREAST CANCER party after my sister in law finished treatments. I made TWO of these and placed them side by side on a nice serving platter!!! she was tickled and said only I would do such a thing and make it funny! BTW, spread jam/preserves of your choice on top and it is addictive! YUMMM!!!

Red Wine Pork

YUMMY !!!! this was VERY GOOD! the only thing I did different was cook the mushroom on top of the stove in some of the pan drippings (they would have been too dried out otherwise). I will definitely make this again (well, I kind of have to since my dh told me to make it again next Sunday !)! Good with plain old mashed potatoes and green beans.
