About this Cook
I really like to cook and LOVE to look at new recipes. But I find I make a lot of the same dishes over and over. I also SELL food for a living for the largest food distributor in the US.
My favorite things to cook
PASTA!!! PASTA!! PASTA !! I love anything with beans (kidney, black, cannelini, etc) and broccoli, but neither are my hubby's favorites! I make a lot of soups in the winter. I do NOT like to bake....I hate the measuring.

Again....Pasta, pasta, pasta !!

My family is always asking me to make my chicken parm for our get togethers!
My cooking tragedies
I have only made two things my husband has hated. He loves sauerkraut and I found a meatloaf recipe with sauerkraut in it....it was HORRID!! I tried making a stir fry only once and it was so salty (without adding any salt!) that we could not eat it.

Red Velvet Cheesecake Swirl Brownies
First let me say, I am not a baker! I will cook all day long, but I don't like to bake. But this Valentine's Day, I made these for my DH. They were pretty good, and like other reviewers said, they were better the next day. Mine came out drier than I would have liked; more like cake than a brownie. But all in all, I would made them again. VERY easy and I had everything on hand.

Easy Caramelized Onion Pork Chops
Everything is better with carmelized onions!! I am making some tonight to serve over left over steak with cheese in a sandwich for DH. I always add a little butter or olive oil to pan, turn heat to high for a few minutes then simmer covered until he gets home.

Mimi's Zucchini Pie
I LIGHTENED this up by using Egg Beaters, reduced fat Biscuik, and only about 1 Tbl of oil. Added more zucchini (cuz I love it and I can't help myself......this is why I don't bake!!); mixed the parm and some fresh basil right into base; chopped instead of whole tomatoe slices so I could have tomato in every bite. Could not find my pie dishes (really??!?!!! cuz I KNOW I have two of them !!!.......guess it's been a while since I baked a pie !!) Used an 11x7 and had to bake an extra 20 min for over 50 min total. Would also be great with spinach and/or artichokes added !
