Artichoke & Spinach Dip Restaurant Style

Not sure what I'm missing, as I picked this recipe based in its high ratings. I followed the recipe exactly as stated (have not read reviews) and it was SO bland. All we could taste is alfredo sauce and cream cheese.

Sister Schubert's® Caramel Apple Crisp

I thought this was so-so. I used Braeburn apples and followed the instructions precisely. I thought it could have been cooked longer, and that the apples were a bit too tart. Would have liked a thicker topping, and, sweeter filling. Might try again, using a sweeter apple and slicing VERY THIN.

Salsa Chicken

My changes: It goes into the crockpot! Add chicken, top with mexican style diced tomatoes instead of salsa (OR rotel + plain diced tomatoes); taco seasoning. High 4 hrs. or low 8 hrs. top w/ sour cream and cheese, on a tortilla! Can add black beans and/or corn as well. YUM!

Easy Baked Tilapia

Had to rate a 3 because it's just a simple recipe, nothing special and over the top. I liked it, but my family did not. My husband put the fish on a corn tortilla and ate it with cilantro jalapeno sauce, like a fish taco, and it was good, but, overall a simple recipe. I used broccoli and cauliflower, that was the only change.

Fideo (Mexican Spaghetti)

I used EVOO, vermecelli/fideo noodles, and chicken stock instead of what this recipe called for. My family hated it but I thought it was good - just like a Spanish rice. I had to give it 2 stars because it was average, not amazing - but, this is a simple Mexican dish I've had before. I'd make it again if my family would eat it!

Hot and Sour Chicken Soup

YUM!! this was SO good! MY changes: I used 2 cups chicken STOCK and 1 cup low sodium, fat-free chicken broth; PLUS, 2 bouillon cubes and 1 extra cup of water. I used garlic-infused rice vinegar instead of red wine vinegar. I also added probably 4 Tbsp. red pepper flakes and it still was not spicy enough for my husband. Everything else I followed as directed, but I topped with crispy wonton strips (our store sells them). The FRESH ginger root flavor was SO good!! I'll make this again!
