Honey Roasted Carrots

I used baby carrots and cooked it at a slightly higher temp (400). They were perfect in 20 minutes. I love the flavor combo of the honey, salt and pepper. For me. the honey didn't overwhelm the carrot flavor at all.

Aunt Mary's Eggplant Balls

These turned out wonderfully! I didn't have any parsley so I just used some Italian seasoning. They were great, but I'd like to try them with the fresh herbs. But either way they were easy and delicious. We will definitely make these again!

Easy Blueberry Cobbler

This was wonderful, and SO easy. I made just a couple of changes. I used probably 7 TB of butter instead of the 8 called for. I also substituted all-purpose flour plus 1.5 tsp baking powder plus 0.5 tsp salt since I didn't have self-rising flour. I also added some cinnamon and vanilla to the batter. It was excellent, with a perfect texture and just the right sweetness. It took right about 1 hour in my oven, though I never got a "clean" toothpick out of the center since it was always covered with blueberry juice. Perfect! Thanks so much.

Slow Cooker Chicken and Dumplings

This was excellent! DH made it today following directions almost exactly and it turned out delicious. The only adjustments we made was using the Healthy Request cream of chicken to reduce the salt a bit and we didn't quite use all the biscuits in 2 cans. Even my 1 year old loved it!
