Mussels Mariniere

This recipe was really good. We used 2 pounds of farmed mussels, and just rinsed them and put them in cold water for 10 minutes to remove any debris. I omitted the bay leaf because I didn't have any. I used a Beringer Chardonnay ($10). I also added about 1/4 C half & half to the sauce at the end. Such an easy recipe, and I served it with Garlic Bread Fantastique from this site. Thank you!

I made this from the herbs from my Aerogarden, and it turned out so delicious! I added a little salt, and used macadamia nuts instead of pine nuts, because its what I had on hand. Yum!

Portobello Penne Pasta Casserole

This was really good, and easy to make. I also mixed in 1/4 C chopped sundried tomatoes, topped with an additional 1/2 C parmesan, and broiled for 5 minutes at the end to crisp up the cheese. The BF loved it, even though he was reluctant to eat a meal without meat. We will be making this again! Thanks!

Fresh Tomato Salsa

I used 2 large beefsteak tomatoes, and 4 Thai chiles, along with the other ingredients. I also added a cucumber, chopped, bc that's what I had on hand to use up. I pulsed about half of the whole mixture in the food processor, so it wouldn't be *too* chunky. So yummy & so easy! I ate it with "Colorful Vegetable Fajitas".

I didn't expect much, since the seasonings are very minimal. But I was pleasantly surprised, and it was very tasty! The only thing I did different is I added some extra firm tofu, and used zucchini instead of squash. Thanks!

Potato Chips

i used a mandoline and cooked the chips 6 minutes in my microwave & they turned out crisp & yummy! requires a bit of time if you want to make more than one serving, but i love the inexpensiveness of making them. thank you!

Magic Mango Bread

sooo good. i will definitely make this again, when i have lots of mangoes that need to be eaten before they spoil! i halved the sugar, and only used 1/4C oil and 1/4C butter, and it still turned out yummy, moist & sweet. thank you!
