Slow-Cooked Steak Fajitas

Reviewed: Aug. 20, 2009
I altered this recipe (due to lack of ingredients) and ended up with the BEST BEEF STEW. I took someone's suggestion of using Chunky Salsa, then added the spices per recipe. I did NOT use cornstarch or onions or green peppers (both are in chunky salsa). It made the most tender, flavorful beef stew. My five year old LOVED it and wanted it for lunch AND dinner the next day. DELICIOUS

Chicken And Apple Curry

I combined many of the tips here and lightly seared 4 chicken breast (pieces) before placing it in the pan. I added 1 cup raisins as well as 2 Tbsp curry. Most importantly, I cooked it for 1.5 hrs - the chicken was dry after only 45 mins. YUMMY !!!

Cathy's Banana Bread

Divine Banana Bread!!! My whole family devoured it. NOTE: I followed the recipe exactly but omitted the nuts, brown sugar, and cinnamon as I wanted a "traditional" loaf. A definite keeper

Unbelievable Rolls

These live up to their name! They are tender, buttery, melt-in-your-mouth balls of heaven. As for people who can't seem to make them "fluffy", I have a couple of tips (as a former pastry chef). First, yeast is VERY Sensitive to High Heat. Make sure that you heat up the liquid and sugar 'til it's "Very warm" but not HOT! Otherwise, you'll kill the yeast. Also, add the yeast and mix it completely. Then add the eggs. Also, I substituted butter for margarine

Oh So Tender Brisket

This has become a staple in my house! It's so easy and the liquid smoke gives it a great flavor. Tastes like you have been tending the grill all day! P.S. I just throw everything into a slow cooker on LOW for 4-5 hrs.

Fish Chowder

This is a real treasure! Few suggestions: Just use 1 can of evaporated milk. Also add some minced red pepper and corn kernels with the cod for color and extra goodness.
