Bourbon Chicken

Substitution for bourbon and recipe for extra sauce to go over rice: I've made this twice and my very picky family loves it. I don't have bourbon so I sub 1 Tbs of vanilla + 2 Tbs water. If I don't plan ahead enough to marinate it overnight, I like to cut the chicken up in strips and marinate it in a ziploc for a couple hours. Then I pour the chicken and marinate in a pan, cover with foil and cook at 350 for about 45 minutes. Sauce for rice: I like to make a second batch of marinate (half the recipe this time). Then add 2 cups chicken broth to it. Bring it to a boil. Dissolve 1 Tbs of cornstarch in some cold water or broth and add that to the boiling sauce mixture and stir until slightly thickened.

Chili Seasoning Mix II

I added this mix to canned tomatoes, 1 lb of ground beef and 1 lb of pinto beans. It was too spicy and the flavor wasn't pleasant (I reduced flour to 2 TBS). I was hoping for something similar to the grocery store seasoning packets in flavor and spiciness, this was NOT IT, it was just spicy, but not yummy. I made it as written except the flour which I reduced and I cut back on the red pepper flakes.

Budget Berry Jam

I would guess that the jam that doesn't set up didn't have the jello completely dissolved, time how long you stir the jello, go at least 4 minutes, maybe five. This is the only way my kids will eat tomatoes from our garden. although it doesn't taste like real fruit jam, it is perfect for kids.

Green Tomato Raspberry Jam

To get this to set up, be sure to completely dissolve jello, stir at least 4 minutes. I just did a comparison between my mock and my real raspberry. The real raspberry has the tart flavor we know love and the mock raspberry tastes like raspberry jello, very sweet, no tartness at all. Kids will love it though. The second time I made this I used yellow tomatoes and cut the sugar back to 1 1/2 cups. That worked too.

Whole Grain Waffles

I loved this recipe. I've never rated any recipe, but I give this 10 stars for a really tasty recipe that can easily be "healthified". A new breakfast staple for sure!!! my substitutions were (what I had on hand): 1 cup coconut milk, 3/4 rice milk for the skim milk olive oil for canola oil 1/4 cup masa harina for wheat germ 1 tablespoon agave for sugar served with unsweetened applesauce. yummy!
