Melissa's Chicken Cacciatore
This was absolutely AMAZING!! I did substitute thyme for personal preference. I did not add in the mushrooms or olives. Other than that, I made the recipe as stated. It was phenomenal and I will make it again in a heartbeat. My boyfriend suggested using the leftovers as a pizza topping and it was so tasty!! HIGHLY RECOMMEND!

Brazilian Cheese Bread (Pao de Queijo)
I couldn't find tapioca flour and somewhere on the internet it said to use 1/4 cup cornstarch and 3/4 cup regular flour for 1 cup of tapioca flour. So that is the substitution I used. I also used butter instead of oil and regular milk, not soy. Added about 1/4 cup of shredded cheddar along with the parmesan. Rolled the dough into 1.5 inch balls (made about 12). Baked for just over 20 mins. Came out good but a bit dry. Maybe it would've been moister if I were able to use tapioca flour. All in all, they were really tasty!!

Creamy Au Gratin Potatoes
This was great! I sauteed shallots and garlic in the butter as it was melting. Did not use onion. Also added an extra 1/2 cup of shredded cheddar. This heats up really well the next day too!!
