OMG!!! So good!!! Made these within an hour of finding this recipe on my E-mail. Measured batter out in 1/2 cup increments - only 80 calories each!!!

Slow Cooker Carrot "Cake" Steel Cut Oats

OK, so many people having issues with this recipe being too runny. Have reduced the water to 8 cups. I never have any issues with 10 cups, but maybe living at a high altitude makes a difference(?) I would recommend at about the 4th hour in the slow cooker, add more oats, a 1/4 cup at a time until the consistency looks acceptable. The same technique can be done if the mixture looks too thick; just add more water.
