Blueberry Streusel Coffee Cake

DELICIOUS! I took the advice of reviewers and did not add as much baking powder (1 tbsp not 2), and the cake was a hit! Even my vegan aunt couldn't resist the sugary crust! Some advice to those who use salted butter: don't ignore the tsp of salt just because of that. Though the cake was delicious, I could tell that it would have had a much fuller taste wit some salt added.

Maple-Drizzled Apple Muffins

These muffins were WONDERFUL! Though the glaze was great, it wasn't needed as the muffins themselves had just the right sweetness. The only problem I had was that there was too much batter for my muffin pan. Not a big deal, but a little bit of a hassle, having to do a second batch for just three extra muffins!

Delicious! But a little too sweet for my taste. Also, the batter was just a bit too thick, so I had to thin it out with some extra milk--just about a tablespoon!

Easy Batter Fruit Cobbler

Absolutely delicious-fluffy and moist! The only thing I did differently was add a dash of vanilla extract. Otherwise, I followed this recipe exactly with great results. I think that so much butter is unneeded, but certainly doesn't hurt!

Hearty Meatball Sandwich

I LUV meatball sandwiches, and this one's great! One thing that's great to do is add some 1/2 in. cubes of fresh mozzarella cheese to the center. This works better if you're making actual meatballs, in which case you'd make a little thumbprint in the middle of the raw ball, press the cube in, and wrap the meat back around the cube. It gives the sandwich an extra surprise, especially if you think the meat lacks flavor!

Raspberry Almond Coffeecake

This recipe was very, very good. I used about half of the brown sugar, keeping the cake from being too sweet and it worked perfectly! One note--There was not enough batter to make both the top and bottom layer, so I had to double the recipe and make a smaller second cake. But, nonetheless, It was delicious. My best friend will be thrilled for her birthday cake tomorrow!
