Chicken and Red Wine Sauce

Here is my version from last night let me first say I hate meat and almost never eat it I am sad to say I cleaned my plate.. I only used 4 chicken thighs skin on I seasoned the chicken with salt, pepper, paprika garlic powder browned the chicken in my Dutch oven with oil and a tad of butter did not cook it all the way, removed it and tossed the skin yuck, tossed in some onions & the brown sugar (1/4 cup) I know wrong place but his is how I brown my onions I think it can take less. Let them brown for a while then added mushrooms brown, Drained off all the fat left in the pot. I added 1 cup stock scraped up all the bits added the wine I used 1/2 cup wine (pinot noir). Set the burner on 3 cooked for an hour or so turning once. Took out the chicken here is where I must have read too many recipes I had thought it called for a corn starch slurry. So I mixed some starch with water added it to the broth tossed the chicken back in and let it do its thing till veggies were done. Happy mistake as this amazing concoction was just thick enough to stick to the chicken and potatoes yum yum yum thanks so much I was no trying to insult you with the changes this is a keeper it made my husband want to lick his plate clean

Boilermaker Tailgate Chili

This is now a new favorite I did make a few changes by not adding a couple of things just for personal preferences and did not have some of them. (sausage, bacon bits, green chili peppers) so I upped the amt. of beef and added more of the chili in spicy sauce and it was so good and I am sure it would be just as good with the omitted items. it was so good I had to make it 3 times in the last month thanks for the post I will never make another recipe.

Nutty Coconut Fish

this was really nice, I only had panko bread crumbs and walnuts and I also used the olive oil mayo, sprayed my cookie sheet with cooking spray and husband at two servings thanks will do this again

Basic Ham and Bean Soup

This is a GREAT basic starter recipe, first I started with stock made from a honey store chicken, then used some better then bouillon paste. I added a bit more water cup or so, I used two cans of great northern beans, and crushed 3 cans of Cannellini Beans to help thicken. I also used an Immersion Blender and ran around the pot 3 or4 times which ground up some of all the ingredients just a pinch of salt. Honey baked ham, roasted red peppers, onion, two cans of roasted tomatoes, pepper, garlic, bay leaf, carrots, no celery hate those things. I had read another review about dry bean not lasting forever, I had started this soup with my old beans and it dawned on me all these years I had made soup with dry beans and had to soak and cook them for a week before I could get them the least bit palpable so thanks very much for this bit of information that dry beans not last forever I guess they had been sitting way to long in some warehouse.

Roasted Brussels Sprouts

awsom I make these all the time but of course I add some extra things to our taste, like garlic powder or garlic fresh added the last 10 or 15 min. sometimes I use garlic in olive oil from a jar, onion power or better yet fresh chopped onions has to be large chunks or it will just burn to death ..just keep an eye on all . I also some times toss in some carrots & potatoes. my brother hates me when I come over and cook for his children and with with recipe I am banned from his house. they refuse to eat veggies but when I made these brussels sprouts they could not believe there eyes the kids actually fought over them and ate them ALL before I could get them on the dinner plates try these for your veggie haters

This was very good I also used pork one time, I did not use wine once was still good and also added a couple of steps for fun. I did the flour, egg wash then seasoned panko bread crumbs before I fried in just a tad of butter and olive oil

Sam's Famous Carrot Cake

This cake it is insane I did tweek it a bit. For the cake I did not add nuts or coconut to the mix I used 3 C of carrots. I toasted the coconut so those that did love it they just sprinkled it on top of their slices they did and loved it. I also heated in the micro wave 1 cup or so of OJ, & of the pinapple juice just enough to cover the hard raisons I happen to have and let them sit until cooled then drained them they were plump and full of flavor. I did up the salt to just ½ tsp not sure if this mattered did not hurt. I did have to use 2 8 inch pans and cooked at 350 for apx 45 min my caked was not a fluffy cake it was a cross between fluffy and pudding I also made it a second time in the 8x12 pan as directed. for the frosting I used 4Tbl butter & added zest of one large lemon finely chopped & a splash of lemon juice, it added yet another amazing note of flavor to this frosting, I love the cheese flavor but make it your own as far as sweetness, all I had was 1 8oz pkg of cream cheese and maybe a ¼ of another I added 2 1/4 cups of confectioner sugar (might add less) 2 tsp of vanilla and I happen to have a splash left of half and half so that was added for a more smooth frosting, I decided to drain another 8oz can of pinapple and add it to the frosting along with the zest of 2 lemons chopped fine yum. This cake was more than a hit it has now been requested as everyone’s new birthday cake and has ordered one for Christmas. This cake is very forgiving and well worth your time.

Shrimp Scampi Bake

I made this last night and my husband loved it, I did use large shrimp and cut them in half long way just so they were a smaller bite and to cook faster. I used more garlic just because we love it. I mixed everything and tossed it in a pie plate, put it back in the fridge for an hour or so then just popped it in the toaster oven for about 10 min, just keep an eye on them to not overcook. I had pre cooked linguine fini from barilla (which I find a thinner linguine) then tossed it in boiling water for a couple of min to reheat. I also had tossed some Brussel sprouts in olive oil, salt, pepper cooked at 400 till crisp also in the toaster oven before the shrimp put them in some foil and placed them on top of the toaster oven to keep heated, served on side this is a great start to a scampi but next time I might add some white wine and parm cheese. as for the mustard really did not notice it but considering it was yummy I would keep it in as I am sure it did add to the dish, easy and yummy

Orange Cranberry Drops

I doubled the batch first off. I cut back the white sugar to ¼ cup just for snicks per batch and the sugar content was ok. This cookie was a cross between bread and cake like. I used dried cranberries and I could not find the orange cranberries so I used the ones that were cherry cranberry so I used a cup of each. I use a heaping tablespoon of orange zest, which was really nice could have even taken more. Also in the picture there seems to be a drizzle on the top of the cookie which I do not see in the recipe I am assuming it is just powdered sugar and milk I also did not use the extract. These are ok the will not be a staple for me but it was a change and everyone seem to like them well enough

Slow Cooker Sweet and Sour Kielbasa

I made this and everyone ate it, but when my husband said “oh hot dogs and beans” my mouth dropped. He was right that is what it tasted like. Not what I was looking for but I made 6lbs for a party and most was eaten.

Hash Brown Quiche

I just toss 2 of these in the oven I am writing this now because I am sure with all the standard yummy ingredients. I am sure it will taste great. I used 5 eggs, one with asparagus, green onions white cheddar cheese & smoked ham, s&p, garlic salt the other one was the same but with no asparagus and added mushrooms. Drizzled 2 tbl. Melted butter on the fresh rinsed dried potatoes and prebaked it for 25 to 30 min. still could have been longer. I am guessing though the egg mixture is supposed to leek in to the bottom of the dish I could find no way to prevent this and I tried really hard.

Creamy Au Gratin Potatoes

Made this last night I made 1 ½ of the cheese sauce 4 med size potatoes and put it all in a greased 8x8 inch pan. There was a cup of the sauce left which I put with the left over’s. I also put some chives in the cheese sauce but did not use the onions. I don’t see the need to layer with the potatoes and cheese sauce as it does find its way between the potatoes fine but I’m sure it could not hurt. It was yummy (4 adults) but I think it could still be kicked up a notch but for kids I’m sure they will lick their plates clean, thanks for posting this for us.

Orange Sauce Chicken

I would have given it 5 but I am not feeling all that zest. it thicken well so much in fact I had to cut an orange and add somemore juice, I also added the hot pepper flakes to give it more depth. now I LOVE sugar but at only half cup still really sweet, will use the sauce on a baked chicken tonight

I gave this a 3 just because mine came out 1/2 inch tall. now mind you I am not a baker but I did follow this step by step very carfully as I really wanted this bad the yeast seamed very happy was it human error? or should I never try and bake again :( I threw it in the freezer hopeing to use it for bread crumbs at some point.

Orange Glazed Carrots

was really looking foward to this as my husband hates carrots so I am always looking for a way to get him to eat them. this came out terrible maybe it was human error dont see how so I gave it 2 stars just in case, I dont know but I threw them out after we tried them once.
