Snow Ice Cream II

Refried Beans Without the Refry

My family loved these! My husband says he'll never buy canned beans again. I used 3 tsp salt, 2 tsp pepper, and the hand mixer to mash them up. They were delicious!

Red Pepper Soup

This was a very good soup that my husband and I both enjoyed. (My 9-year-old didn't like it. She doesn't care for chili and no amount of telling her this was NOT chili would convince her. Red soup = chili to her.) I felt like it was missing a little something until I stirred in some sour cream right at the end. Loved the extra tang and will use that instead of cream next time!

Quinoa and Black Beans

This was my first time preparing (or eating!) quinoa. I used chicken broth, since that's what I had, and stirred in some cut up chicken sausage. My husband and I both really liked it, though my 9-year-old didn't really care for it. It was very good and I'll make it again!

Bagel and Cheese Bake

I used "Everything" bagels and cubed them and also added a green pepper. Everyone liked it and my dad even asked me for the recipe! Next time, I will make it in a muffin pan so I can easily freeze individual portions.

Slow-Cooker Corned Beef and Cabbage

This was SO good! My husband had to leave to go pick up our car right as we started dishing it out. I sent him a text that he better hurry because we weren't going to save him any. I used the full bottle of beer and no water and it was SO moist and flavorful. I wish I had it cooking again in my crockpot right now!

Rainbow Clown Cake

I made this cake over the weekend for my daughter's birthday. I used cream cheese frosting and crushed up Oreos in it becuase her original request was for Oreo ice cream cake--which I had to veto because we had her party at a skating rink and it would have melted. I made the cake while she was gone, and then wrapped up the glass pan so that she couldn't see into it. When I cut it at the party and lifted out the first piece, all of the kids' jaws dropped open and my daughter was SO excited! It was so much fun to surprise her with such a neat cake. Will upload a picture as soon as I find my camera cord!

Sopapilla Cheesecake

I made this for our Mexican themed movie night and everyone really enjoyed it! I only melted two tablespoons of butter and used MAYBE one one of them. (I used a silicone basting brush.) I had to bake this for closer to 45 minutes. When I pulled it out at 30, it was still really doughy. Delicious, though and even the leftovers were a big hit! I'll definitely be making it again.
