Black Bean and Corn Quesadillas

Yummy, a great meatless dish. We try to eat more meatless dishes mostly because its cheaper. I did not cook them in butter just a dry skillet worked fine. And I added about 1/2 tsp each cumin and chili powder, delicious!!!

Easy Key Lime Pie I

I made this using the amounts given by other reviewers, 4 eggs, cup of lime juice, and 2 cans of condensed milk and it was great. It got a ton of compliments.

Mel's Best Ever Chocolate Pie

This was delicious. I used regular hershey bars and caramello bars. I also made extra whipped cream for the top which was also yummy. I found this tasted much better the next day so i would definately make it the day before I needed it.

Blueberry Sauce

Very tasty. I did not think it had a strong citrus flavor. I had it right after I made it and also a few days later and it was delicious both times. I used it as a topping for waffles and also as a spread for biscuits. Will make this again.

Raspberry Cake

When I first made this cake it was really heavy and I was like oh no this is going to be awful but it was absolutely delicious. The cake was so moist and flavorful. I didn't make the frosting quite the same though. I pureed the raspberries a little then I whipped up a pint of heavy cream and folded the raspberries in with 2 tbsp of powdered sugar. It was a fabulous frosting and I piped it along the edge and in rows on top of the cake and then I put fresh raspberries in alternating rows. It was very pretty and it got rave reviews from my friends. Will be making many times again.

Red Velvet-Center Cheesecake

This was very yummy. i used a red velvet cake mix instead of making one from scratch. The cream cheese mixture is what makes this though. I would like to try it with some other cake flavors as well.

Grandmother's Buttermilk Cornbread

This is the best homemade cornbread I have ever had. The first time i made it i forgot to add the sugar and it was still delicious. The only thing i do differently is to add about half a can of corn to it just because I do that to any cornbread recipe. This is my go to cornbread recipe from now on!!!

Peanut Butter Pie

This pie was just as good as one I get at a local bakery. It was amazing. I used a chocolate graham cracker crust and i also put a layer of chocolate pudding on top of the peanut butter layer. I will be making this again and again!!!

Mom's Buttermilk Pancakes

These were very good. I think next time i will add 1 tsp of vanilla as one reviewer suggested. I don't use maple syrup so I would have liked some sweetness to it but that is just my tastes, but the pancakes were delicious!

Overnight Cinnamon Rolls II

These were absolutely wonderful. Loved that all I had to do was bake them in the morning. I did the recipe as is and wouldnt change a thing. I did make a cream cheese icing for them though. I will definately be making these again and again.

Classic Waffles

These were delicious. I did as a few others suggested and cut the salt in half and added 1 tsp of cinnamon. I would skip the cinnamon though i think if i planned on doing strawberries and whipped cream which is exactly how i am going to serve them next time.

This was absolutely fabulous. I made it exactly as is and my husband and I both loved it. We just added a dollop of sour cream to the top of ours. These were great as leftovers too. I just made it and i am already to make it again!!

Libby's® Famous Pumpkin Pie

Made this for Thanksgiving this year and right off the bat I realized i had made a mistake and did not buy the deep dish pie shell but shallow ones so i made two thinner pies. I put foil on the crust so it didn't burn. Then I was so busy doing other things that when my timer went off i just turned it off without taking the pies out, i remembered soon after and they ended up being a bit overbaked but on turkey day they got rave reviews. A very delicious and forgiving recipe if the pie is overbaked. Will definately be my go to pumpkin pie.

Creme de Menthe Grasshopper Pie

Wow so good. Everyone loved it. It was super easy to make and very delicious. I did use a pre made oreo crust but I would like to try it with the homemade crust next time. I would also like to make the filling and layer it in a parfait glass with some brownies too. The 1/4 cup creme de menthe is perfect it was just the right amount of mint.

Yummy Eggnog Pie

This pie was so delicious. I made it for a family Christmas party and everyone raved over it. The pie wasn't liquid but I would have liked it a bit more set but I think the reason it did not set up so well was because the box of cook and serve pudding I got was 3oz and that was Jello brand. I don't know if another brand makes the right size box but missing 1.6 ounces of the thickening agent could be the reason so many people on here haven't had a real firm pie. I would definately make this again.

These were absolutely delicious. I love rainbow cookies and I will definately be making this recipe again and again. They were a little time consuming but well worth it and because its a 13x9 pan i got a ton of cookies out of it. I added a little butter to my chocolate when melting it and it made it a little softer to cut and didn't crumble. I baked each cookie in a greased foil pan and skipped the wax paper and they all came out of the pans fine.

Fat Pete's Fudge

This fudge was delicious and I love the fact that it made a lot. It is a very soft fudge and i did find it difficult to cut. I think next time i might buy some inexpensive small foil pans and pour the fudge in then and give out the small pans as gifts. Very easy to make and yummy though!!!
