Meal Planning 9/29 - 10/3

I'm cutting a couple days off since once again things have been crazy and not to plan mainly thanks to me just not putting in the effort. I used this past weekend to catch up on my rest after a long work week and missing out on having the weekend prior. I am tired most days still, but overall feel pretty good!

Still a lot of recycling of things I haven't gotten to - I've had Lean Cuisine for lunch a couple days but I really miss having something fixed at home so I'm determined to make a more concerted effort at least through this week to fix lunch and breakfast ahead of time. I've been craving protein almost every morning so I know I need to get back on track and be better about sticking to the plan so I get a more balanced diet in each day, for myself and baby girl. I am sure I will feel better too! I haven't been as good lately about drinking enough water either, so that's another thing I need to include in my attempt to re-focus! :)

Wednesday, September 29th

Breakfast
1 cup 1% milk with 1 cup cream of wheat
1 small banana
1 scrambled egg w 1 TBS cheese

Lunch
Egg Salad Sandwich on whole wheat
            1 hardboiled egg diced with
            1 TBS light mayo
            1 TBS relish
            Lettuce, tomato, cucumber
1 apple

Dinner
Sweet N Sour Meatballs
Green Beans
½ cup brown rice
½ cup unsweetened applesauce

Snacks
½ cup light cottage cheese and 1 cup mandarin oranges

Thursday, September 30th

Breakfast
1 scrambled egg w/ ½ oz cheddar cheese
Bagel Thin w/ 2 TBS light cream cheese
1 cup grapes

Lunch
Chicken Wrap with
            Whole wheat tortilla
            2 oz. chicken breast
            2 leaves shredded romaine
            1 TBS light Ranch
            .5 oz shredded cheddar
1 apple

Dinner
Enchiladas and Cheesy Nachos

Snacks
1 apple and 2 FF fig Newton cookies
 
Friday, October 1st

Breakfast
1 hard boiled egg and 1 pc toast
1 cup 1% milk
1 cup grapes

Lunch
Tuna sandwich on whole-wheat bread with:
1 TBS light mayo, 1 TBS relish
4 slices cucumber, 1 leaf lettuce
2 med. slices tomatoes
1 small apple
4 oz. 1% cottage cheese

Dinner
Pizza at Big Pie In the Sky w/ friends

Snacks
Nutella and Pita Bread

Saturday, October 2nd

Breakfast
Biscuits & Gravy

Lunch
Mozzarella, Basil & Ham Panini
Baked French Fries
Tossed Salad

Dinner
BBQ chicken sandwiches
            3 oz. chicken
            1 whole wheat bun
            2 TBS barbecue sauce
1 cup cooked broccoli
½ cup 1% cottage cheese
Kenneth - sweet potato fries

Snacks
Orange and Fat Free Pudding


Sunday, October 3rd

Blueberry Coffee Cake
Scrambled Eggs

Brats on Buns w/ condiments

About Me
I love preparing meals for my family, I grew up eating home cooked dinners as a child, and felt that time around the table was very special. It gives me a LOT of pleasure to prepare something my family enjoys!
My favorite things to cook
I cook with a lot of chicken, we prefer boneless, skinless breasts. I don't think I have a preference for a certain style of food, or ethnicity. I cook mainly simple, meat and rice/pasta/potatoes kinds of meals. I enjoy trying different flavors and fixing new recipes. We enjoy italian, southern, mexican, etc.
My favorite family cooking traditions
It's sort of a tradition in our house to have biscuits and gravy every weekend, usually Saturday morning. My husband grew up in the South, and it's comfort food! I love preparing a Traditional Thanksgiving Dinner: Roast turkey, green bean casserole, mashed potatoes, stuffing, rolls, and cranberry jelly... MMMMM!!!!
My cooking triumphs
I think I was pretty thrilled with myself the first time I successfully made a home-made pizza crust. I am also very good with homemade breads, and very proud of my banana and lemon poppy seed breads!
My cooking tragedies
I have two classic cooking tragedies from when I had just started cooking (age 16) - the first time was when I tried to thicken gravy by adding flour directly into the HOT liquid - LOTS of clumps... it was SOO gross! The 2nd time was when I tried to make my first white sauce, and I just could NOT get the flour to milk ratio right, it was pasty and disgusting!!! I've learned a lot since then, but those are classic OOPS memories!
