Chicken Tikka Masala
This is a good recipe (minus the salt) for people who do not have access to garam masala or curry leaves. If your spice cabinet is well equipped, you should make some changes. You can replace all the cinnamon, all the black pepper, and half the cumin for a similar amount of garam masala. Conversely you can just add a bit of ground coriander seed, clove and cardamom (garam masala being mostly a combination of all the aforementioned spices). Put curry leaves in the sauce while it cooks. Even if you don't have access to these ingredienta, there's still one important change worth making: add a bit of minced onion and minced ginger to the sauté (and get rid of the ginger in the marinade).
