Chinese-Style Baby Bok Choy with Mushroom Sauce

Yum! I added chopped chicken from a rotisserie chicken I picked up at the grocery store at the end to make it an entree and will probably serve it over rice next time. Very easy. Great weeknight meal!

Zucchini Herb Casserole

A versatile recipe I see a lot of potential for. I'd like to try it as a garden burrito filling, or as an Italian dish with basil, oregano, orzo, and Parmesan Reggiano. Maybe even try topping with french-fried onion rings or breadcrumbs for a crunch. It's a great start! (I agree with other reviewers - be sure to double the herbs and garlic!!)

Big Soft Ginger Cookies

Delicious! However, I don't know what I did, but with walnut-sized balls, I got just over 3 dozen cookies! Also, my batter was fairly dry and very easy to work with - no problems there. The cookies were soft and wonderful - I wholeheartedly recommend this recipe!

Actually Delicious Turkey Burgers

Wow, I'm impressed! As you can see from earlier reviews, this is a really flexible recipe. I also used what I had on hand - Italian breadcrumbs, basil in place of the parsley, and I doubled the garlic. Served on cracked wheat buns with a slice of Tillamook Colby Jack Cheddar. Delicious!!!

Grandma's Chicken Noodle Soup

Yummers!! I took the advice of Chessacat and bought a rotisserie chicken and added the entire chicken (bones and all) to the pot. Very tasty and flavorful. Would definitely make again!!

Spinach and Strawberry Salad

Easy and delicious - I don't usually like fruit in my salads, but the sweetness combining with the sour of the vinegar is incredible!! Next time I'll use slivered almonds instead of the sesame seeds for more crunch.

Chicken Tortilla Soup I

A nice summer-type version of a black bean chili. Very flavorful! I topped with ALL of the garnishes and had some lime sour cream (8 oz. sour cream + juice of 1 lime) as well!! Yum!!!

Delicious and easy - a big holiday hit!! A wonderful change from the usual pumpkin pie...I'm not a big cheesecake fan (but I am a big pumpkin pie fan!) and I loved this creamy version.
