Peanut Butter Oatmeal Cookies

I used butter instead of shortening, and only used 1 cup instead of 1 1/2 cups. I used old fashioned oats, because that was what I had on hand. They turned out great!! Love them!

Pumpkin Chip Drops

So good and love that they are fairly healthy! Used half whole wheat flour and the other half all-purpose. Used old fashioned oats and mini choc chip cookies because that is what I had on hand. Loved these!!

Black Bean and Corn Quesadillas

Slow Cooker Chicken and Dumplings

Very good! I first put one can of chicken broth in slow cooker. Then whole frozen chicken breasts. Seasoned with some salt, pepper and parsley. Then added butter and 2 cans of cream of chicken. Added enough water to cover chicken. Cooked on low for 4 hours then added cut up biscuits for an additional 2 hours. Thickened up the sauce a little bit with some flour. Sooooo good!

Spicy Grilled Shrimp

So good! Only used 1 tsp salt and only 1 lb of shrimp. Baked the shrimp for about 10 minutes at 425 degrees with the shells on. Could eat this every week!!

Easy Shake and Bake Chicken

I used only 2 lbs of boneless, skinless chicken breasts and they were still very juicy. Doubled the paprika, sage and black pepper. Also, added little bit of ground red pepper, onion powder, and parmesan cheese. And used only a couple of tablespoons of butter. Came out juicy and crispy and delicious!!

A good, healthy snack! Subbed in 1/2 flour as whole wheat, 1/2 of the sugar as brown sugar and used applesauce instead of oil. Kids love them, especially for breakfast!!

Chicken Suiza Cornbread Bake

So, so good! Love that it is something very different. Used less butter, used 2 eggs...baked corn base for first 10 min. Used drained pinto beans instead of mushrooms. Next time want to use less sour cream and substitute the rest with cream of chicken. Also will add cayenne pepper and red pepper flakes to both mixes. Good!
