Oven Scrambled Eggs

This recipe is fantastic as is. They're perfect for brunch because they come out perfectly fluffy (more fluffy than I when I do scrambled eggs on the stove) and I can focus on finishing other dishes or welcoming guests and getting them drinks. I always add a little pepper and small cubes of cream cheese to make them extra special. For a breakfast/world cup party tomorrow I've also added a cup of caramelized onions and 4 links of chorizo. This recipe is infinitely adaptable.

Creamy Chocolate Frosting

This is a good basic recipe that can be dressed up easily. I wanted to make coconut flavored frosting but didn't have any coconut flavoring. I replaced it with coconut oil and it was great. I also didn't have evaporated milk. I used a little less than what was called for since the coconut oil is more wet and it worked perfectly.

Nana's Southern Coleslaw

Made my first coleslaw ever. It's pretty good. I don't like raw onions, so I switched in garlic, which I can't recommend. I won't make the same mistake next time. Also, I would add a little less liquid. I did follow the other suggestions to decrease the sugar a little and that was good.

Pecan Pie V

For 29 years I thought pecan pie was disgusting. A friend made this me and I make it all the time now. It's especially good with a pie crust that has a little extra salt.

Giant Chocolate Chip Cookie

I love a cookie cake! This is especially delicious with frosting. I use the Mint Buttercream Frosting (with vanilla instead of mint). I followed the suggestion of using a little less flour, and it worked very well.

Mom's Zucchini Pancakes

This is fantastic! I didn't have green onions so I used red onions (next time I'd shred them as other suggested). Also didn't have sour cream, but it would have been better, so I had it with butter salt and pepper. DELICIOUS!

Grandma's Green Bean Casserole

I tried to make this and realized I had run out of most of the ingredients, so I improvised. Even with my failure to have the right ingredients, it was very good. I added garlic with the onions which I cooked before adding the flour. I didn't have sour cream, so I used half milk and half cream cheese. The cream cheese made it divine. Even with all my substitutions it was very good and as soon as I make it with butter and some cheddar, I'm sure it will be fantastic. I do have to recommend adding garlic and cream cheese for a little extra flavor. The melted butter (or oil) over the topping makes a big difference.

Rockin' Salsa

Living overseas and can't buy my Newman's Peach salsa. This is a fantastic and easy stand-in. I don't can, but may start. The tomato paste is absolutely crucial. I ran out and tried it without and it was not good.

Yummy Bok Choy Salad

I didn't have anything but the dressing ingredients and the bok choy. It was delicious just with that. As another reviewer recommended, I added some ground ginger. It was fantastic!
