Jimmy's Mexican Pizza

Even though I made a few changes due to what I had on hand this was an excellent flavorful dinner. My husband loved it ! I used only mozzarella since that's what I had. I also didn't have any green onion or sour cream so I dolloped guacamole on top. To cut a few calories I used 1/2 the amount of re-fried beans. Great recipe..

Baby Spinach Omelet

Excellent omelette. I used 1/2c egg whites for each omelette and followed the directions otherwise. I did sprinkle a bit of cheddar cheese for a bit of gooey cheese in the center. Nice brunch with a salad.

Chicken Breasts Pierre

Really delicious !! Not too sweet, just enough of a zip. I added some extra garlic. I didn't have hot pepper sauce so I used buffalo chicken sauce. And I didn't have Worcestershire so I added some soy sauce, a pinch of cloves, and a bit more vinegar. So tasty. My husband who is not a big chicken fan loved it !! I will keep this recipe as a favorite. Thank you Nancy.

Baked Tilapia with Garlic and Herb Oil

I was cautious when I saw so few reviews but had Tilapia and spinach on hand. I seasoned the spinach a bit more with garlic and Italian seasoning, salt and pepper. I also sauteed the spinach with a whole onion and spices before baking with the fish. My fish cooked at 425 for about 15 minutes. The end result was very good. I will try it again and may doctor it up further, but it was a nice looking satisfying recipe. My husband thought it was really good.

Cousin Cosmo's Greek Chicken

I pounded the chicken before I read the reviews, I will create a pocket next time. Even though I didn't quite have enough feta and used Italian Seasoning, it turned out so good. I did bake it at 350 for 30 minutes after pan browning. Then while the chicken baked I tossed the spinach( about 4c )into the frying pan with a can of diced tomatoes, a sprinkle of pepper flakes for heat, a few chopped garlic cloves, a cup of chicken broth, and some Italian seasoning. I added some cornstarch to thicken it up and served this over the chicken. My husband who is not a chicken lover asked me to fix this again

Guinness® Corned Beef

I don't like Guinness but I loved it in this recipe...get the biggest corned beef you can as it goes fast ! I followed the recipe exactly and cooked it all day in my cast iron dutch oven at the 300. I did turn it every 2 hours and removed it after 5 hours to cook the vegetables. The vegetables were awesome cooked in this broth ! I saved the broth so I can cook more vegetables today. I used a large bottle of Guinness so I had several cups left over. I cooked carrots, turnip, cabbage, potatoes, onions, and parsnips. All were delicious !!

Chicken Stir-Fry

We enjoyed this a lot. I did double the soy/ginger/garlic and added it in with the vegetables. I also added mushrooms and peppers, any vegetable will work well. I also added a bit more cornstarch with the chicken broth so the end result was a nicely thickened sauce. A bit of chili paste gave it a nice heat too.
