Brooke's Best Bombshell Brownies

These brownies are truly amazing! I have never really been able to successfully make brownies, even from a box. Mine are always too dry (I blame my high altitude). These were perfect! I however, could not being myself to add 3 cups of sugar so I did 1 cup white sugar and 1 cup brown. Worked perfectly. Also, I used Special Dark cocoa powder because it was what I had on hand. Yumm! I found my new go to brownie recipe for sure!

Awesome Sausage, Apple and Cranberry Stuffing

Was I the only one who thought this didn't call for enough bread? It was flavorful, but seemed to consist of more sausage and cranberries than bread, which is not what I think of when I think of stuffing. When I was making it, I thought it seemed like it needed more bread, but followed the recipe. I should have followed my instinct and added another cup or two. Again though, it had pretty good flavor ;)

Grandma's Green Bean Casserole

This is yummy yummy yummy! My husband said " this is the best green bean casserole I've ever had, and I've had a lot of green bean casserole. " I of course added a bit more cheese, but I think it would have been absolutely fine without it. I even used canned green beans and it was still good ;). I used this for a Thanksgiving side dish, but we'll incorporate it into the regular rotation.

Chicken Enchiladas V

I really don't like to leave bad reviews, but this was one of the most disappointing recipes I've tried on this site. To be fair, I should have been able to predict the outcome by reading the ingredients. The canned soup gives it such an artificial taste, that is so unnecessary. These tasted like something you would buy in the frozen food section. The taste was actually not terrible, as in they were edible, but they don't taste anything like how an enchilada should. A good enchilada sauce is a key to good enchiladas, and canned soup is definitely not a substitute. I guess maybe this could be a recipe to throw together with what you have on hand though.

Slow Cooker Pulled Pork

This is an awesome recipe! I don't really change anything. I do use a picnic roast instead of a tenderloin. I cook on low for about six or seven hours then drain the liquid, shred and put it back in on "keep warm" for another hour with the BBQ sauce. You can taste the root beer a little, but it ends up being good anyway. It's a sure fire way to get great pulled pork!

Awesome Ham Pasta Salad

This was an interesting recipe. It tasted like something you would buy at a deli- in a good way. I used only about 10 small sweet pickles and less than half a cup of the juice, only because I'm not a huge fan of sweet pickles. I also added a little homemade ranch dressing just to give it a little kick up the flavor a bit, and I was glad I did. I also added black olives. My husband was nuts about this! I will definitely be making it again!

Sam's Famous Carrot Cake

This was pretty good. It was very moist! It ended up being very bland though. I swear I could taste the flour and baking soda. I did by the way, add more spices than it called for too (I added almost a whole Tbs of Pumpkin Pie spice in addition to the other spices) I was glad I did, it might have been inedible if I hadn't. I made it with the Cream Cheese Frosting II from this site (I made it with 1/2 ts. of vanilla extract and 1/2 ts. of orange extract instead of one ts. of vanilla, soooooo good!) and it really helped the flavor. But my husband and I both liked it a lot despite and will make it again- just with even more spices. Thanks for the recipe Sam!

White Bean Chicken Chili

Great recipe! It was tasty, healthy and relatively inexpensive to make. I like many others used Salsa Verde in place of the tomatillos. I also added more beans than the recipe called for, but only about a half a can. I also simmered for about 40 mins or so on low. If you're in a rush then 10 mins is fine I'm sure, but the longer you simmer the more the flavors will marry and it will also thicken up a little ( I saw a few reviews that either added cornstarch or complained that is too thin. It is more like a stew than a chili). This will be a staple dinner in our house from now on!

Key Lime Pie VII

This recipe is so wonderful, my husband and I can polish off a whole pie in a day and a half! I follow the recipe almost exactly, the exception being I only use 2 cans (about 2 cups) of sweetened condensed milk. I don't think I would like it with all three cups, it would be way to sweet I think. With two cups it is the PERFECT balance of sweet and tart for us, and fills the pie crust perfectly. I top it with whipped cream I make with 3 TBS of powdered sugar and grate lime zest over it to make it pretty. So happy I found this recipe! One last little hint- you can make it with any type of lime and I find it's delicious either way ;) I may try it with lemon juice just to experiment next time.

Too Much Chocolate Cake

This cake is amazing! I live in Denver, so it's very hard to bake here and have it not be dry. Not a problem with this recipe- it comes out perfect EVERY time!! I make my husband take the majority of it to work (b/c I shouldn't be eating half a cake) and one of his employees who is getting married asked me to make this for her wedding cake. It's one of the best cakes I've ever eaten. If you follow the recipe exactly you will NOT regret making this. I had a little problem making a cake with the cake mix as the base, but decided after eating it that I no longer care because it's so good. I drizzle it with the Chocolate Ganache recipe from this site and it's amazing. Two quick tips; 1. Use mini choc. chips (Ghiradelli works well), they melt better. 2. This recipe, as it states pretty clearly- is very chocolately. Some reviewers have complained about too much chocolate. That's literally in the name of the recipe- why would you be surprised by how chocolately it tastes?

Simple Crustless Spinach and Mushroom Quiche

This recipe is amazing! My husband said it was the best quiche he has EVER had! I'm sure it's awesome as written, but on some suggestions from the other reviewers I added one large shallot and 2 large cloves of crushed garlic in with the mushrooms. I still added the onion powder, but just a little. I also added a little ground mustard as well. I cooked up about 1/2 lb of bacon, chopped it up and threw that in there too. I used a mix of mozz and mild cheddar cheese. I also sprinkled just a little cheese on top and it made it soooo golden brown and pretty. This will be my new go to quiche recipe for sure!

Roasted Vegetable Lasagna

This recipe is sooo awesome! My husband who claims to hate anything and everything eggplant gets so excited when he knows I'm making this. I cheat a little and make it distinctly non-vegetarian and brown sweet sausage and add it to the sauce-it's incredible! I also use almost two jars of the spaghetti sauce. The other modification I make is to use 1/2 the ricotta cheese the recipe calls for and sub with about 6 oz of cream cheese, it makes it really smooth and creamy. The recipe is amazing as is without my changes though, thanks so much for sharing!
