Marshmallow Ice Cream Topping

I loved this recipe because I have always been trying to make marshmallow topping for ice cream and had never figured out how to do it. I love marshmallow flavor so that is why I liked it so much. I probably would not add vanilla next time as it turned the color to a beige. It is a little stringy when cold, but I found if I heated it in the microwave for a few seconds it was easier to put over the ice cream. Thanks

Dinah's Baked Scallops

In order to rate this a 5 star I did heed others advise and added 2 cloves of fresh garlic, cut down on the crackers and the butter. Also added some red pepper flakes and some freshly grated parmesan cheese. After it baked I also put the dish under the broiler for a few minutes to brown it some more. It was delicious and will make it again with those improvements.

Lemon Horseradish New Potatoes

I wasn't too sure about these potatoes, but was willing to give it a try and they turned out delicious. I turned them a couple of times so they were nice brown and crispy. There was not one scrap left after our dinner. We will certainly have this recipe many more times.

Baked Salmon II

Everyone was right - this was very good. I did use less oil and used fresh herbs which I had growing. Also more lemon and less salt, but I never measure salt - just add what I think is correct by a sprinkle or two.

Louisiana Shrimp Creole II

We loved this shrimp dish. I cooked it in the morning leaving out the shrimp till I warmed it again at dinner so the flavors would have a chance to meld. Because we love spice I added a little bit of cayenne pepper and a bay leaf. It is a keeper for sure.
