Soft Oatmeal Cookies

My family loves this cookie recipe! I have tried both pressing with the sugar-coated fork and just rolling into a ball without flattening. Both methods work very well. I think next time I will cut back on the salt--maybe 1/2 tsp instead of one tsp. The only that baffles me is the yield--I got more than 5 dozen cookies, so I am not sure about the reported 2 dozen number, but no complaining here! :)

Long Soup

Terrific recipe! I accidentally let the soup boil vigorously for several minutes and the pork remained tender despite my lack of attention! I added 5 cloves of garlic and some julienne carrots--just my preference, and I thought the carrots added some color. I served with egg rolls and salad--an easy weeknight meal that all five of my family members enjoyed. Thanks, Corwynn!

Quinoa Broccoli Casserole

A lovely and different side dish (or for me, an entree'/one dish meal)! I doubled the recipe, but forgot to add the second can of soup--it turned out OK, and maybe the other can of soup would've made it too salty? I thought the lemon pepper taste was a little funky--next time I prepare I'll just use fresh ground pepper, and if missing flavor maybe add fresh squeezed lemon. Easy to modify for even lower sodium and fat based on ingredients used...a keeper!

Garlic Wine Chicken

Very nice! The sauce made enough for several servings, as several reviewers have mentioned. I served by layering a 13 x 9 dish with pasta, putting the chicken on top of that and pouring the sauce over all with parsley as a garnish. Simple to prep, complex in flavor and liked by my family = a winner!

Chef John's Ham and Potato Soup

This was a terrific recipe, and I found the video helpful. Chef John is a great teacher and entertaining to boot. I mistakenly added only 1/2 the suggest butter and cream and still the soup was rich and satisfying. Thanks Chef John!
