Herbed Rice and Spicy Black Bean Salad

This recipe disappointed me in a way. I made it because I love absolutely every ingredient, but somehow all together they weren't too spectacular. Oh it's edible and I plan to consume every morsel, but I won't be making it again. If I do however, I would decrease the cayenne at least by half and use kalamata instead of canned black olives. Brown rice would be healthier and maybe an addition of more herbs would enhance the flavour. I always do a recipe as written first and normally don't find the need to change a thing. Not this time though.

Chicken Cordon Bleu Lasagna

Made as written but used non-hydrogenated margarine, low fat cream and Swiss cheeses plus whole wheat lasagna noodles to make the recipe healthier. Loose bread crumbs did not appeal to me and if I make this again I will blend with a little margarine to hold them together. All in all I was pleased with how this turned out; I was able to use up a lot of leftovers in my fridge and it was delicious!

Healing Cabbage Soup

Poor Man's Fried Rice

I really enjoyed this recipe but found it just a bit flat in taste. I made it exactly as written...not sure what I would do differently next time but will try some extra spices and add a few different veggies too. Will be reading reviews for ideas. But I had all the ingredients on hand and it worked out for me in that respect this time.

Slow Cooker Creamy Potato Soup

Followed this recipe right to the letter with the ingredients and it was a wonderful creamy and very easy potato soup! The only alteration I made was cooking it on high until it was time to put in the cream and milk and then switched to low for 45 min. It turned out to be perfect and I will definitely make it again. Will be great for lunches this week!

Enchiladas

Absolutely simple and delicious! Made exactly as written, but used medium salsa instead of picante sauce (as that is what I had on hand) and Kraft Habanero shredded cheese for a little heat...it was fantastic and hubs asked me to make this on a regular basis! I definitely will, for sure :-)

Linguine Pasta with Shrimp and Tomatoes

OMG...this recipe was absolutely fantastic! I followed it right to the letter, as I normally do with a new recipe and then assess what I would alter if I were to make it again. Well there is very little that I would change and I most certainly will be making this recipe again. I had an abundance of garden tomatoes to use up, so I did use fresh but did not peel them which resulted in a bit of an undesirable texture. My only change going forward would be to peel my tomatoes if using fresh. My husband says that this is the best new recipes I've made in a long time so you can bet it will be on our table again soon. It would be perfect for company as well...simple, fast and very very tasty!

BLT Salad

Made this for a pot luck and it tasted fabulous!!...but I wouldn't bring it to another one. It becomes a slimy unappealing mess when left on the table for very long, thus the three stars. This recipe needs to be tossed with the dressing and eaten immediately! But other than that the salad is easy, flavorful and goes over very well! I will be making it again.

Swiss Chicken Bake

OMG...this recipe is soooooo delicious!!! I followed exactly as written with the exception of adding a few broccoli florets which I'm not sure I would do next time, as it seemed to overpower the rest of the flavours. But even so, we loved it and I will be making it one of my go-to recipes when I need a simple and fast supper. I think this could even be served for special company with a salad or steamed broccoli on the side and a nice brown and wild rice mix, which is what I served it with last night. MMMMMMMmmmmmm!!! Give this one a try...you won't be sorry. :-)

Personal Portobello Pizza

I am on Weight Watchers and the Simply Filling technique, so this recipe was perfect for me. Unfortunately I didn't read all the reviews first but I did scrape out the gills, just to allow more room for toppings and glad I did. However that being said, it was still watery...I followed the times and temperature to the letter. In my next attempt, I will turn up the heat and pre-bake the mushroom caps for a few minutes longer, I will use olive oil and pizza spice instead of the more watery sauce and will experiment with a few different and additional veggie toppings. This time I used lean deli thinly sliced ham for the meat and 1/3 cup low-fat mozza cheese, which for any WW people out there, amounted to two points on Simply Filling. This was great...cured my craving for pizza and will most definitely be making this again. And on a regular basis! :-) PS...hubby loved it, even though he only got a couple forkfuls...hehe Will need to make more next time.

Strawberry Spinach Salad I

What can I say that someone hasn't said already, but I wanted to add my thumbs up on here and say that this salad was a hit at our Easter gathering this year. Next time I make it however, I am going to try and use a little less sugar as for my own taste, it was a little sweet. I substituted pine nuts for the almonds because I didn't have any in the house, but the pine nuts worked well, as I'm sure walnuts or pecans would have too. But if you want to try something that's a little different and looks absolutely lovely on the plate, give this salad a try. Most folks will be back for seconds, I guarantee it. And have the recipe handy to give out because you certainly will be asked for it! ;-)

Haddock Bubbly Bake

Yummy yummy yummy!!!! My husband buys haddock in 10 pound boxes, so am always looking for new ways to cook it. This recipe seemed to appeal to my effort level and the ingredients I had on hand tonight. Dinner was made easily in under an hour and complete with green beans and rice, we enjoyed it thoroughly!!! I will make Bubbly Bake again and I would not change one single thing! I highly recommend this one. Thank you Susan! :-)

Orange Pork

I tried this recipe exactly as written and found it to be quite good. The only thing I intend to do differently the next time I make it, is to use low sodium soy sauce and more cornstarch and water. Unless you like a very salty taste and a rather thin sauce, I would recommend both changes for a really nice pork chop supper. I served mine tonight with white rice and corn, and the combination worked well. :-)

Chicken and Ham Casserole

Thought I would try this, as I needed to use up some leftover ham and chicken. It turned out ok although very creamy which didn't appeal and also it lacked something, but not sure what. My husband loved it however but I told him to enjoy, as he won't be seeing it on the table again. ;-)

Seafood Creole

This recipe was absolutely delish!! I made it for Valentine's supper tonight and it went over fabulously well with my significant other. :-) I made the recipe exactly as written like I aways do the first time and even though we both enjoyed this creole, I would do a couple of things different in the future. Firstly, the amount of hot pepper sauce was just a little bit too much heat for me...so would go down to a quarter teaspoon and put the tabasco bottle of the table for others who may need more. Then I would add at least another times as much peeled and chopped tomato, as I didn't really think there was enough. And finally, the sauce would have been better thickened up at the end with a bit of cornstarch and water. But honestly...it really was great just the way it turned out tonight even all of that said. I recommend trying it!!

Danny's Macaroni and Cheese

Made this for supper tonight and it was fantastic! Made a couple of slight changes...I added a cup or so of cubed ham that I had in the fridge and drained the stewed tomatoes as I thought it might end up being too watery otherwise. Used a combo of shredded cheddar/mozza and added a bit of cheese on the top; baked with the lid on and finished the last few minutes with it off for browning. I will make this again and again! My husband went back for a heaping helping of seconds!! Great easy and tasty recipe. :-)

Spinach Salad Supreme

Extremely delish!!! I followed to the letter, although substituting red pepper for green which is what I had on hand. There were three of us for supper and quite enough dressing for the salads...could have even served four. My husband couldn't stop Mmmmm-ing and saying that I could certainly make this again any time!! High praise. I will be making it again to be sure. :-) Thank you Gail!!
