Pumpkin Chocolate Chip Muffins

I read many of the reviews before I made these...seems like everyone re-wrote the recipe before they rated it! The comments about it being too dry/dense/moist really bother me, when the reviewer made substitutions that drastically alter the batter proportions. So I made these muffins exactly according to the recipe. They're moist and tasty. 5 stars.

Slow-Braised Beef and Cherry Tomato Sauce

This is like homemade Chef Boyardee! I found it a bit plain - if you saw the video, definitely spice it up as Chef John suggests. Even following his recommendations, it was still bland. I would also add a generous amount of frozen peas at the end of the cooking time, to help offse the blandness. The meat turned out great. Don't worry about the sauce being too watery - the pasta will suck it all in, and it will actually turn out a bit dry. I'll use less pasta next time.

Creamed Cabbage

This recipe just isn't good. I used fresh cabbage from my garden, and followed the recipe exactly. The leaves are so greasy that the cream sauce isn't even sticking to them. The flavor isn't that great, either. I prefer Beth's Scalloped Cabbage.

Golden Yam Brownies

Blue Cranberry Sauce

This is an excellent recipe! I used frozen blueberries that I bought fresh earlier this year when they were in season. I also added a touch of ground clove, tangerine zest, and the juice of one tangerine. Next time I'll make a double batch.

Butternut Squash Fries

Delicious. Used a touch of olive oil to keep everything from sticking. They were crispy on the outside, and soft on the inside, similar to a steak fry. Dipped in a butter/brown sugar/vanilla sauce.

Cucumber Sandwich

This sandwich is great when you're looking for something a little bit out of the ordinary. I used spinach in place of lettuce, and substituted Italian pesto salad dressing for the red wine vinegar and olive oil.

Grilled Honey-Lemon Chicken

This is a great recipe. I've made it a few times, and found I prefer to cut the Italian seasoning in half, and skip the salt. The chicken breasts I buy are usually already injected with a salt brine, so no need to add more. It's funny to see all the reviews attributing moist chicken to the marinade....raw chicken is moist, even without a marinade. It is overcooking that results in dry chicken. So, use this marinade for a nice, lemony chicken, and make sure not to overcook it if you want it moist :)

Homemade Black Bean Veggie Burgers

I used 2 eggs and 1 cup bread crumbs. I was a little unsure about the seasoning, since some reviewers said it was bland, and others didn't like the cumin. I substituted 1 TB of a GrillMates powdered marinade from an envelope packet (used 'Southwest' flavor, but any would be good). Skipped the cumin/chili/hot sauce. Delish! Will try this again with different veggies - black olives, shredded carrot, etc. to keep it interesting. Freezes well. Served with lettuce, tomato, and a slice of American on a toasted whole wheat bun.

Coconut-Lime Sorbet

Outstanding! For everyone who claims this "isn't sweet enough", double-check your ingredients. Coconut milk is what you buy in the intl food/Thai section of the store. This is NOT what you want. The correct ingredient, 'cream of coconut' is insanely sweet, and is located in the liquor section, with the cocktail mixers (lime juice, grenadine, sweet and sour mix, etc).

Chinese Chicken Fried Rice I

This only gets 1 star, becaues the instructions are so bad that I can't figure out how to make it. The ingredients specify '2 eggs', but the instructions state 'stir in scrambled eggs'. Do you just whip them and add them raw? All at once, or drizzled? Or is there supposed to be a step where you place them in a pan and scramble them over heat?

Dad's Magic Bar Olives

I saw this recipe on Kathleen's Allrecipes blog, and the pictures were enough to convince me to try it. Very good. I've always had trouble getting breaded coatings to stick with other recipies, but this one is no-hassle, and the result look professional.

Microwave Caramel Popcorn

Wow, who knew this was so easy. All the microwaving seemed a bit too involved - i just did it on the stove top. I popped my corn on the stove-top, too. I drizzled the topping and mixed in a large bowl. Worked perfectly. Under 10 minutes from start to finish.

Chicken In Basil Cream

Eh, not a fan of this. It was extremely bland. The sauce didn't have much flavor. I found myself wishing I had made alfredo sauce (just add more cheese and garlic to sauce) or chicken cordon bleu (add wine, and also capture some REALLY great flavor from the chicken). I already have favorite recipes for both of these from this site. So, no need to make this bland sauce again and try to doctor it to match a 5* recipe that I already love.

Creamy Caramel Flan

The camelized sugar makes a nice presentation, but it really doesn't have any caramel flavor. If I make this again, I will make my homemade caramel sauce (carmelize sugar in water, then mix with half & half or whipping cream), and drizzle the sauce over each serving. This recipe is very easy, but I was a bit dissapointed with the result.
