Stuffed Pepper Soup I

Rave reviews from all when I brought this in for soup day at work!! It is very thick though as written; therefore I did add water to this and also substituted worcestershire for soy sauce. A second green pepper is also recommended as well as a clove or two of garlic.

Barley Lime Fiesta Salad

I love barley and the ingredient list sounds like a fantastic mix; however this just was not a hit with me. It wasn't bad, just nothing special and the flavors did not seem to mesh. I did get some positive reviews from other diners, but most were in my boat. I had a ton left over and thankfully my father was one of the few that really enjoyed it so he too the rest home with him. I also made the honey substitution for corn syrup, but doubt that would've made it that much better. It is healthy, I'll give it that, just not that great.

Quinoa Black Bean Burgers

I try to go meatless a couple times a week and have purchased several different varieties of meatless burgers. This combination of quinoa and black bean is fantastic, much better than anything I've tried in the store. So when convenience isn't a factor, I tae the tim and make these. I do find that these tend to crumble easier than the store bought brands, likely because they're fresh, but the taste is well woth it.

Cauliflower Soup

I just do not care for this recipe it all although I'm a big fan of cauliflower. It's not filling; there's not much flavor. I tried adding cayenne and topped it with parmesean, but still, nothing. I do not like the texture of the mashed cauliflower floating in the broth. Perhaps if I would've left the chunks it may have felt more like a meal.

Healthier World's Best Lasagna

This is the world's best lasagna - everyone loves it and begs me to make it again. As a personal preference, I did switch out the ricotta for a cottage cheese/egg mixture, but otherwise followed it as written. No one minded the turkey swap one bit as it had plenty of flavor. One strange thing, I did find myself with some extra sauce both times I made this so I think you can be more generous for each layer. I ended up freezing it and using it for spaghetti sauce and that was good too.

Swordfish a la Siciliana

I love swordfish and was looking for a recipe that worked with baking rather than grilling. My first impression was this is awesome, love it. By the time I finished my piece, I did not care for the topping as much. It was such an overpowering flavor.

Mulligatawny Soup I

First time trying mulligatawny and it was a huge success - rave reviews from all I shared with. I did add some additional curry powder and a garlic clove after reading some of the reviews, but followed the rest as published. Next time I would consider throwing in some cayenne for heat, but it was a 5 star recipe without. Thanks for sharing!

Barley Bake

This is one of my very favorite recipes. I was only able to give it 4 stars as I did modify it slightly. I use chicken broth instead of veggie broth, added a clove of garlic, 1/2 tsp crushed red pepper and 3/4 tsp cayenne pepper. I, like many others, cut the butter down slightly (about 1/6 cup). It is however pretty vital to the overall taste of the dish. The 'soupiness' once the dish is cooked that some have complained about, will be mostly absorbed in 5 minutes from removing it from the oven. The remaining moisture assists in reheating it for the next day so this has not been a problem for me. I will reiterate what another reviewer stated, 'never use quick barley in this dish'. Made that mistake once; it was awful.

Cheesy Chicken Meatballs

Fabulous recipe. This is the 2nd time I've made it and everyone absolutely loves it. I agree that putting the balls together can be sticky/tricky with the ground chicken, but do not recommend extra breadcrumbs. I think the texture/flavor is perfect as is and wouldn't want to dull it down with the extra crumbs. They were great on their own with red potatoes on the side, but next time I think I'll try them in an italian dish.
