Marinated Ranch Broiled Chicken

A-mazing! Used apple cider vinegar because that was what I had. Grilled to perfection at 7 mins a side. I will be watching for chicken sales so I can grill up tons of this for the non-grilling season! Thanks!

Delicious Raspberry Oatmeal Cookie Bars

Have made these a couple of times now, they're a total hit. Doubled the most recent batch for work, they were a hit. I did not worry with greased foil, spray was sufficient. Agree that one key factor is working the oatmeal mixture thoroughly and pressing in to pan well. Mine hold together very well.

Beef Taco Skillet

We liked this a lot. Fast and easy. Plan to spice it up next time, perhaps with chilis, black olives and onions. We actually liked the cooked tortillas, they did get soft but more noodly than gummy. Though as I think about it now, I used low carb/high fiber tortillas. Could be the difference.

High Temperature Eye-of-Round Roast

Didn't work for me though followed directions exactly. Am aware though that my oven is "slow". Nice outside and inside is plenty juicy. Finishing it with some heat, it won't take much. Will try again but will probably keep a little heat (200) on it.

Guinness® Corned Beef

I made this as written and LOVED it. My rack/roasting pan combo actually held the brisket (not a round) ABOVE the (single can) Guinness. Wrapped tightly and cooked in the oven, the flavor was wonderful! I made 3 briskets for New Years, and tested 2 methods. The others were more classically cooked and this was preferred. With a 4 pound brisket, I did end up cooking it about 45 minutes longer, but my oven is reliably slow. Only downside is I would not/did not choose to cook veggies with it. I'll cook the veggies with the spice pack and always do my briskets this way from now on.

Cheese Ravioli with Three Pepper Topping

Prepared 2 versions. Needed a dish for a meatless meal for a family from my church. Doubled the peppers and onion for two batches. I prepared the first exactly as written except I used vegetable broth and added some basil. Only had a small taste, but it was great! After preparing the first version, in the car as I delivered it, thought about all the notes I'd read here. Finished my family's portion with the chicken broth, added sun dried tomatoes, shredded squash (had some to get rid of) added white wine and heavy cream. Topped with shredded parmesan. Very very good. This is one that is great as written and can be played with in any number of ways...thanks!

Baked Ziti II

We loved this. I made it exactly to the recipe with the exception that I undercooked the ziti by a couple of minutes and added some Emeril's Essence seasoning. I also served it with additional sauce on the side for those who wished it (most partook). This is will be a keeper, not only in my household but in a larger meal ministry for whom this was a test run. Thanks!
