Easy Granola Bars

These are incredibly tasty and I love that they do not contain flour! My four kids and husband are crazy about them. I got a little creative with additions, but I used the overall basic recipe. I added mini chocolate chips, a small handful of peanut butter chips, flaxseed meal instead of almonds, and a scoop of peanut butter. It seemed slightly dry as I was mixing it, so I added maybe 2 tablespoons of unsweetened applesauce. They were nice and crunchy on the edges but chewy in the middle. They held together really well. Next time, I'll play around with more peanut butter and maybe some banana chips. Thanks for a keeper!

Margie's Shortbread Oatmeal Cookies

These are great. I must mention that I added one egg, 1 t. vanilla and 1/2 t. salt as others recommended, so I didn't make the "exact" recipe. Still, these were very tasty. A little crispy, a little soft. The vanilla really added a nice flavor. I mixed in some cinnamon to some of the dough before I baked the second tray and the cinnamon was a great addition. These will be nice cookies for the lunchboxes this week. And perhaps they are a teeny bit healthy with the oatmeal. ;-)

Slow Cooker Chicken and Dumplings

Soooo good. My entire family, including four kids ranging from 2 to 8, ask for this meal often. It's just so tasty. Some notes: Unlike other reviewers, we like to use all of the biscuits the original recipe calls for. My kids really love them. Also, I use chicken broth to cover in the crock pot instead of water, and use onion powder instead of onions. The kids love to help make the dumplings. They roll them into little bite-sized balls. I'm so happy we found this recipe. It's great with cooked carrots or sweet peas.

Campbell's Kitchen Penne with Sausage and Peppers

Not good...at all. The gravy just doesn't work with this. It would have been much better if I would have just drizzled the pasta, sausage and veggies with olive oil and then a sprinkling of parm cheese. The gravy is just icky with it! My 7 year old said she would give it 1/2 star. Sorry!

Single Cup Hot Buttered Rum

This is really, really tasty, and I didn't even have ice cream to add. Instead, I used cream (and Captain Morgan Spiced Rum). It was perfect, except I tripled the recipe and it barely filled two mugs for my husband and me. Definitely double it for one person.

No Bake Rum Balls

I really wanted to like these. In fact, I ate a lot trying to convince myself I liked them, but they were just so-so to me. I had actually never had a rum ball before, so maybe you have to have a thing for rum balls. I can just think of a lot of other ways I would like to spend calories!

Juicy Steak

This was just O-K. Nothing excellent, but I guess it isn't fair to compare it to a nice grilled steak! Might try it again this winter when we can't grill out, but I also might keep looking for the tastiest way to cook up a steak inside.

Beans and Rice

Ehhh...well, this was okay. My daughter liked it. My husband and I not so much. My youngest son wouldn't touch it, but that's nothing new! ;-) Not a terrible meal if this is all you have on hand, but I would not make a special trip out to get the ingredients.

Zucchini Egg Bake

This is soooo good. Took it to a brunch for a women's event at the church, and it was the only one of four casseroles that was totally empty at the end of the meeting. I realized I was out of onions, so I added extra garlic and some dehydrated onion. I also added just a little shredded cheddar on top to add a contrasting color. The fresh basil makes it super tasty. (I used dried majoram)

Basic Microwave Risotto

Absolutely delicious. First time making risotto. Super easy and got rave reviews from husband and sister. Kids didn't like it, but what's new?!? Update 1/10--tried it again and used red wine and it was even better, and really pretty! Plus, the kids liked it this time!

Vegan Cupcakes

These are really, really good, and I don't bake vegan, but had to give these a try. I added just a little extra coconut extract to the batter and left out the vanilla flavoring. The cocoa-orange juice-powdered sugar makes an amazing frosting for them. Will make again!

Oatmeal Pancakes II

Perfectly delicious. Just used milk, because I didn't have buttermilk and was too lazy to make the vinegar-milk replacement. They were still wonderful. All 5 members of the family loved this breakfast!

Peanut Butter Muffins

Not bad...not fabulous. They were a little bland, but I think the changes I made helped them. I added 3/4 t. of vanilla and an extra 2T. of brown sugar. I also used 1/2 white flour and 1/2 whole wheat flour. My kids liked them really well with peanut butter on top...or jelly, so I'm glad I tried the recipe.

Skillet Apple Chicken

With a few changes this is an AWESOME recipe. My husband was crazy about it. I sauteed an onion in the oil before I added the chicken, used garlic powder instead of salt, about 3/4 t. cinnamon and a tiny bit of nutmeg. I also used two apples. Then, after the chicken cooked for about 5 minutes, I added about 1/2 to 3/4 cup of apple cider. I served it with a really yummy whole grain brown rice and green beans. It was scrumptious. I can't wait to make it again!

Zucchini Alfredo

While my husband really enjoyed this dish, I thought it was a little too cream-cheesy tasting to pull off the word "alfredo." I added double the garlic as well as sauteed onions (about 3/4 of an onion) and it still had a strong cream cheese taste. Not a bad recipe for using up some garden zucchini, but I definitely wouldn't run out and buy zucchini especially for this dish.

Zucchini Brownies

Amazingly good. Both the frosting and the brownie were delicious. The only reason I give it 4 instead of 5 stars is because the texture is more like cake than a brownie. I made the recipe exactly as stated. Still, it was a very delicious dessert that all of the adults and children in my family loved. Thanks for a yummy recipe!

Mom's Zucchini Bread

This really is the perfect zucchini bread recipe...and an excellent base to try other things with, such as muffins, cakes, etc. I used the batter to make one loaf as usually, and to the remaining batter I added 2 heaping Tablespoons of cocoa powder, then sprinkled chocolate chips onto the batter after I poured it into the pan. It was amazing! My whole family went crazy over both the plain and chocolate loaf. I made this recipe twice last week and plan to make it again next week for some friends. Thanks!

Blackberry Cobbler

Really tasty. I thought it turned out great...although just a touch soggy. It got some good reviews from guests, although my husband thought it had too much of a butter flavor. I, personally, really enjoyed it and will make it again! Thank you.
