Baked Pork Chops II

Ok, so I did forget to add the water. Otherwise I followed the recipe exactly. I don't think the water would have changed anything. Tomato sauce plus brown sugar equals ketchup. My family thought they were eating pork chops with ketchup. That's ok if that's what you want to serve, but I would have just put ketchup on pork chops and baked to save the prep time and the homemade tomato sauce. Not terrible tasting, and the kids liked it, but not what I had expected.

Basic Bread Stuffing

Ours turned out too dry - could be our fault. The recipe didn't call for it, but I think it should have been covered (we cooked ours outside the bird). I'll try it that way next time and see if it remedies the dryness.

Day Before Mashed Potatoes

Very easy and good. Made Thanksgiving a lot easier. I added a little extra butter, and will probably cut down on the sour cream next time so it's not the prevalent flavor (it's pretty strong).

All-Chocolate Boston Cream Pie

I agree with SHIMMERCHK - cake was nothing to write home about. I followed recipe exactly, and was not overly impressed. It tasted good, but not great. I've made better homemade cakes. I served it for Thanksgiving, and everyone liked it, but didn't ask for seconds. I don't think I'll make it again.

Homestyle Turkey, the Michigander Way

This was my first turkey and it turned out great! We cooked it breast side down until the last 1/2 hour, then flipped it so it would brown. Very good!

Caramel Apple Cheesecake Pie

I made this when we had friends over for dinner. 2 of us liked it, 2 of us thought it was too sweet. I think maybe I don't prefer the canned apple topping. If I make again, I'll create my own apple filling. And maybe use fewer eggs in the cheesecake portion. 3 eggs is an awful lot - a standard cheesecake typically only uses 1 egg for each 8oz of cream cheese.

Caramel Sauce

I agree with LLCH - it does tend to be on the sweet side. And I especially agree with OFIESTY - it's better to be safe than sorry. I actually cooked mine in a double boiler. Let it simmer for 1.5 hours, and it turned out like advertised. Next time though, I think I'll just melt some caramels...it's a lot quicker.

Baked Mashed Potatoes

These had a great texture - fluffy and light. It was a bit bland for me (I like really buttery potatoes), but I think some extra butter and onion will remedy that in the next batch.

Chicken Cordon Bleu I

Fantastic. My variation includes: add some paprika to the breading, and bread the whole chicken roll, not just the top. I also like to cook my chicken hotter and faster to keep it juicy - 20-25 minutes at 400. Final suggestion: add the honey-mustard sauce from this site's Aussie Chicken recipe (inside the roll and/or as a dipping sauce). It really complements this dish!

Aussie Chicken

This dish really is as fabulous as everyone says. The honey mustard suce is especially good - I plan on using it in some other recipes, including my chicken cordon bleu. This chicken would also be great as a sandwich.

Applesauce

Excellent! I only used a dash or two of sugar and added a couple of 4" cinnamon sticks to the simmering apples (mmmm!). I didn't process the apples - I mashed them up with my potato masher for a great chunky applesauce!

Applesauce Barbeque Sauce

I really enjoyed the flavor of this recipe. I used homemade chunky applesauce, then ran the sauce through the food processor to smooth it out. My husband thought it was too sweet, though. Next time I think I'll add a little more paprika for more kick.

Easy Key Lime Pie I

Very good! I followed previous suggestions and doubled the recipe (AND the cooking time), and it turned out nice and firm. Very tasty - even my husband likes it, and he doesn't normally do "tart" foods. Thanks for the recipe!

Mock Tuna Salad

I'm not a chick pea fan, but this turned out pretty good (and it definitely does not taste like tuna!). I put the salad between two tortillas and heated it in the quesadilla maker. I found it to be a bit bland, but certainly easy and worth the trouble of trying.

Caramelized Baked Chicken

I followed some previous suggestions when using this recipe with boneless, skinless chicken breasts. I cooked the sauce on the stove for about 15 minutes then put it on top of the chicken. 20 minutes at 400 and it turned out delicious.

Turtle Cheesecake

This was my first cheesecake with "stuff" in it and it was great. I substituted white chocolate chips for the semi-sweet so I don't think it's as chocolatey as it would be - next time I'll follow the recipe (but it still tastes delicious). I also used a waterbath - no cracks. I did not, however, realize that the nuts and caramel were going to creep up the sides of the pan instead of staying on the bottom. Turned out perfect though.
