Spicy Vegan Potato Curry

I made this for my daughter who is a Vegan. She isn't particularly fond of Indian spices and hates peas. So, I added spinach (frozen) and eliminated the curry powder, garam masala, peas and coconut milk. I substituted olive oil for the vegetable oil. I also spiced it up a bit more with crushed red pepper flakes. She loved it. My husband loved it too. I have made this recipe a couple of times and it gets better every time.
