Vegetarian Split Pea Soup

I wasn't a fan of split pea soup until I found this recipe - this soup is delicious! The chipotle chili powder adds a nice kick. I cook this on the stovetop since I don't have a pressure cooker. I usually puree half the soup once it's finished cooking so it's smooth but still has a little bit of texture. Also, I leave out the orzo because I think the soup is perfect without it.

Peanut Noodles

Really good! I followed suggestions from prior reviews and tripled the ginger and doubled the red pepper. I didn't have cider vinegar so I substituted rice wine vinegar, and I used whole wheat spaghetti and natural peanut butter because that's what I had on hand. The next time I make this I'll saute some garlic along with the onions and ginger, and reduce the peanut butter just slightly. I'll also add veggies and/or chicken as other reviewers suggested.

Downeast Maine Pumpkin Bread

This is the best pumpkin bread recipe I've found. I made the recipe "as written" the first time around and then started to experiment in subsequent attempts - it's always moist and delicious! I usually cut the sugar down to two cups (one white, one brown), decrease the oil to a half cup, add a half cup of applesauce, increase the spices slightly and substitute whole wheat flour for white. I gave away loaves of this over the holidays and everyone loved it.

Pumpkin Turkey Chili

Quick, healthy and delicious! I like my chili spicy so I doubled the garlic, increased the chili powder and added cumin. I also added a bit of cinnamon because I thought it would go well with the pumpkin and other spices. I added a can of black beans (drained and rinsed) and a can of vegetable broth and simmered for about half an hour. I will definitely make this often!

Robin's Sweet and Spicy Black Beans

A different and delicious way to serve black beans! I usually simmer for an hour covered, then remove the lid and simmer for an additional 10-15 minutes to allow the mixture to thicken.

Spiced Sweet Roasted Red Pepper Hummus

My all-time favorite hummus recipe! It's great with pita wedges, but I also love it as a dip for fresh vegetables and as a sandwich spread. If I don't have tahini on hand I substitute natural peanut butter and it tastes just as delicious. I'd give this recipe more than 5 stars if I could!

Amazing Brown Rice Salad

Delicious, and tastes even better the second day! Chill for at least a few hours to allow the flavors to blend. I sometimes substitute instant brown rice and it comes out fine.
