Marinated Flank Steak

Made one, froze one. When I cook this, the kids excitedly say, "Ohhhh, are you making Asian food?!" I am half-Asian so the kids know the smells of soy sauce and garlic. I may just add ginger to this next time!! Family loves this recipe.

Simple Carnitas

Love it! I have made this 5+ times. I use half the salt and it is still delicious. I use the leftover broth to make Mexican Rice II.

Delicious Chicken Casserole

Definitely add the extra cup of rice, a cup of mixed veggies and a half cup of shredded cheddar. I left out the butter since I added cheese. Great the next day, too.

Chicken Enchiladas II

I just made these enchiladas for dinner and did not change a thing. I doubled the recipe but wished I only add one can of diced peppers as it was too spicy for the kids (6 & 10). However, DH and I loved them and we will fight for leftovers tomorrow.

Easy Slow Cooker French Dip

So easy and delicious. I did not cook for the full 8 hours and the meat was fully cooked. I guess it depends on the slow cooker you have. The mozzarella on a toasted french roll added the perfect flavor.

Wild Rice Shrimp Bake

This was a winner. I added Old Bay Seasoning but should have added more pepper. I also started cooking the green peppers and onion first and did not cook the shrimp all the way through so it would still be tender after the time in the oven. I used Uncle Ben's rice mix which did come with its own seasoning package. This added to the yumminess of this recipe. Thank you, Lee!!
