Minced Beef with Black-Eyed Beans

Good, BUT I doubled the spices and personally still could have used a little more. I also only used 1 tablespoon oil and 93% lean ground beef. 5 tablespoons would've been wayyyy too greasy. Also to save time I used 1/2 can of Rotel tomatoes with green chiles as my local Target didn't have fresh green chiles or tomatoes in stock and I didn't feel like hiking over to the grocery store. ;P Plated over a 1/2 piece of naan and now I have lunch for 4 days :D

Chicken Saag

The saag part turned out perfectly but the chicken was a little dry. I think you should just sear the chicken pieces before adding the tomato/onion spice mixture (which I also pureed, to get a consistency closer to what I've had at restaurants). Also 1/4 cup water for the spinach (I just used a whole bag) wasn't enough to get them properly steamed, more like 1 cup. A package of thawed frozen spinach would also work I think if you're pressed for time. Next time I will also throw in a couple whole dried chiles. Also nonfat plain Greek yogurt works well in place of sour cream :)

Connie's Zucchini "Crab" Cakes

This was pretty tasty. I did what other reviewers suggested and squeezed out the water from the freshly grated zucchini with a rice cooker. If I were to make this again I probably would use only half as much bread crumbs, because it turned out kind of doughy. I also would add extra seasoning, maybe a dash of paprika, a few pressed garlic cloves, some black or cayenne pepper?

Roasted Brussels Sprouts

Trying to get more green & leafy veggies in my life will be no problem with this simple recipe. I halved & quartered some of the bigger sprouts. I swear they taste like popcorn!

Beer Braised Irish Stew and Colcannon

I used just the stew part of the recipe and OMG yum. I browned the beef and threw all the other ingredients into the crockpot to cook throughout the day. I used a bottle of Killian's Irish Red. My roomies loved it too, I was quite stingy with the leftovers I'm afraid! ;)

Szechwan Shrimp

Yummy! Tastes like it came from the Chinese restaurant down the street, but less salty and without that sitting-under-the-warming-lights flavor. Personally, I could handle a tad more red pepper & honey, I love the spicy-sweet contrast!
