Easy Pesto
As-is, I found it a little bland, but it was definitely VERY easy to make. I added some parmesan, lemon juice, garlic salt (in addition to the 3 cloves) and a couple mint leaves, and then it had enough tang for me. Also toasted the almonds on the stovetop instead of in the oven.

Mexican Bean Salad
This was very good! I halved the oil and vinegar, per many people's recommendations, and ended up using 1 1/2 large bell peppers and only 1 Tbsp of sugar. Used a can of (drained) corn to save time, which also worked very well. All the other amounts were followed. This was great on its own and would probably be even better as a side to a meat dish. Would probably also be great with chips or over tostadas. Will definitely make this again!

Spinach Enchiladas Verde
Added: Mushrooms, a small onion, and a clove of garlic sauteed with the spinach. Then a can of rinsed black beans, as well. Used pepper jack instead of Monterey Jack, and used at least twice as much sauce as called for, with a few dashes of hot sauce until it met my heat needs. Extra cheese on top, and voila! I realize that wasn't the original recipe, but it was SO GOOD in the end.
