Lighter Banana Muffins

These were really good. Made a couple of adjustments: used 4 very ripe bananas, used half whole wheat flour/half all-purpose, added 1 tsp cinnamon, and about half a cup of nonfat banana yogurt. They came out great! They were a little chewy, but full of yummy banana bread flavor. They rose nicely, and I used paper muffin cups and did not have a problem with them sticking once cooled slightly. I will definitely make these again!

Chicken Enchilada Dip

This dip is awesome, I wouldn't change a thing! I am always asked to bring this dip to gatherings and there is never any left over! To add a little more heat, throw in another jalapeno or two.

Creamy Banana Bread

Mmmmmm! This was delicious. One of the best banana breads I've ever had. I did need to cook about 15 minutes longer than called for. But they came out perfect! I will be making this one again.

Baked Curry Chicken

mmmmm...this was yummy! I ommitted the coconut and added more curry powder and bit of red pepper. I also followed other reviews and doubled the sauce. I then served it over basmati rice. It was excellent! I will definitely be making this again soon!

This was excellent. I followed another reviewer's idea and made individual portions with cresent dinner rolls. They were too difficult to "roll" so I made calzone-style. So easy and delicious! I couldn't find ground lamb so I used ground beef. Next time, I am going to search for the lamb to make a more authentic gyro. But nevertheless, this was really good and I will definintely make again.

Crab Quiche I

I made this twice, the first time with swiss cheese and imitation crabmeat, the second time with monteray jack and cheddar and 2 6 oz. cans of crabmeat. Wow! What a difference. I didn't care for the swiss and imitation my husband liked it so I decided to try it with the modifications. I really enjoyed this quiche the second time around. Very rich though so serve with something light.

Shrimp and Crab Bisque

This was excellent! I left out the crab and doubled the shrimp. It was just as good as I've had at restaurants. Will definitely make again!

Deviled Chicken I

Seven Layer Taco Dip

Excellent!! I added a pound of seasoned cooked ground beef over the refried beans and left out the green pepper. It was perfect!! Definitely the hit of our party!

Louisiana Shrimp Creole II

Very good recipe. I expected it to be spicier though. Next time I will add more chili powder and hot sauce. But overall very good. I topped with a little bit of shredded cheddar cheese as well.
