Asian Orange Chicken

Delicious!!! Had a little trouble getting the chicken to brown evenly in a wok...the wok seemed pretty dry even after adding the oil. I'm wondering if deep frying the chicken pieces might be worth a try. Or maybe heating up pre-breaded chicken? My family loved it anyway and you could have put the sauce on a sponge and it would have been good. The only thing I omitted was the red pepper flakes, just a matter of taste. Also, I had forgotten to marinate the chicken ahead of time, so I just let the chicken chunks sit in some orange juice before I coated them with the flour.

Raspberry Oatmeal Bars

I know, I know, I made some changes, so I'm not really reviewing THIS recipe. However, it was still excellent so it gets 5 stars with my changes, which were: French Vanilla cake mix instead of yellow and apple dessert filling instead of the raspberry jam. I also only had regular rolled oats instead of quick oats, but they turned out fine.

Crab Couscous Salad

Good salad, but I think next time I will dress it differently. I found the olive oil taste in this dressing a little too prominent. The dressing needs to taste fresher and tangier.

Chicken Scampi II

Delicious! Served it with rice at Christmas Eve and everyone loved it. One thing I did was cover it for the 10-15 minutes while the chicken was cooking and probably shouldn't have - it made the "sauce" more like a very thin broth. I had to add some corn starch to thicken it up a little so it would coat the chicken pieces better.

Janet's Rich Banana Bread

After reading the other reviews, I was very tempted to tweak the recipe, but I resisted (except I did mash the bananas instead of slicing them. That was the ONLY thing I did differently). The bread was moist and delicious and got rave reviews from all those who tried it.

Pineapple Pretzel Salad

I would abstain from stars if I could, only because I "tweaked" the recipe and therefore am not truly rating the recipe as presented. My alterations: I only used a little more than 1/2 cup of butter for the crust. Also, 1/2 cup of sugar (or in this case, Splenda) was more than enough to sweeten the cream cheese filling. The pineapple layer was where I really was unsure of the outcome. I used 2 cans of well drained pineapple to which I added an entire packet (six serving size) of sugar free vanilla pudding. I actually thought it a little dry and bitter tasting. I added a little pineapple juice which didn't help much. I then added about 1/2 cup of milk, which seemed to improve both taste and consistency. That became the final layer. My guests all thought it was delicious. I thought it was good, but not great. About half of the pan got eaten and frankly I don't think I'll be saving the rest.

Sweet Potato Casserole II

A big hit! I used 5 large sweet potatoes and found that for my taste, 1/2 cup of white sugar was plenty sweet enough.

Best Carrot Cake Ever

I deviated only slightly from the recipe: I only had 3/4 cup of oil, so I added 1/4 cup of applesauce. I also omitted the raisins and nuts. This recipe made enough for 2 8-inch cake layers and 3 cupcakes (one of which I claimed). I used store bought cream cheese icing and I found the cake to be very tasty with a nice moist texture. I did find that it baked faster than the recipe stated. Overall, I'm very satisfied with the outcome and I'm looking forward to sharing the cake with my family!

Cream Puffs

My puffs didn't puff!!! I've made cream puffs before, so I'm not really sure what the problem is. Could be because I used egg substitute. Well I made two pans worth that are going in the trash. I will try again using real eggs.

Cinnamon Swirl Bundt Coffee Cake

I read the other reviews and made some modifications when I made the cake. I coated the Bundt pan with cinnamon & sugar, used brown sugar instead of white for the filling, omitted the nuts and added a little extra sour cream (light) to the batter. Results were great!! We took it to a friend's house and I got a desperate e-mail two days later that the cake was finished and they needed the recipe ASAP.

Bourbon Chicken

Made this again (I wrote a review last year) for another Mardi Gras party and got rave reviews. I used 6 lbs. chicken thighs, tripled the marinade recipe, used 3/4 cup bourbon total and used Sweet'n'Low brown in place of the regular brown sugar. It marinated for 8 hours and came out great. My guests kept saying - Wow this really does taste like bourbon chicken!! The leftovers are going fast.

Charley's Slow Cooker Mexican Style Meat

Great recipe!!! I made a mistake and did the first 6 hours on low instead of high heat. When I realized, I switched it to high for three more hours and it was perfectly tender!! I used regular bell pepper and added some ancho chile powder. overall, I cut down on the spice quite a bit, and I might try adding a little tomato paste next time for flavor. Served it for friends and my husband and everyone loved it! My three year old wouldn't eat it, but then there's not much she will eat. Very glad there are some leftovers!!
